Great that you did this. I love cheese paste. Butter was used mostly over Mayo to allow the transportability of the cheese paste. Can’t risk a Mayo base when you hiked all the way up to Paria and your sandwich has gone bad. Also mustard raises the taste of the cheese some how.
Butter with milk replaces the mayo, making it vegetarian-friendly and less likely to spoil.... It's perfection once you have the proportions right.... Some people (kids for example) prefer a less sharp cheddar flavour too and the butter fixes that... There's a place for the no mayo version 🤗

I tasted the simple one and then elevated one... and without any doubt, I poured the simple paste back into the food processor with the elevated paste and added more of the spices to make an even BIGGER elevated paste!! Cury wins!!! I also added a little turmeric! Deliciou!!. 🇨🇦

As someone from another Caribbean island. We sometimes use that, but we mostly use the pan cheese to make the cheese paste and it gives a much richer deeper colour.
Watched this vid an made me instantly hungry for a cheese paste sandwich... I put chow chow in mine as a sub for mustard... a lil black pepper for a mild spice.. and some butter (margarine) to make it a lil more creamy .. big thumbs up 👍
Nice. We don't eat hot pepper. You sure right it tastes great with onion, pimento and carrot. I make cheese paste both ways too. With a fork and processor. Cheese paste is made when we have children that are picky eaters too. Great job 🙂

Oh no, nothing green in this paste. For me, I must have pimento, chadon beni and bit celery. Garlic. No mustard. No butter. Lots of mayo! And obviously sugar heightens the flavour of salt food so yes a little sugar.

regular yellow mustard is perfect but if you feeling real fancy, dijon is next level. I wouldn't use honey mustard... too sweet.

No it isn't. Salt is added to sweet and sweet is added to salt to heighten the flavour. So yes, a little sugar works.
