- I love Polenta, it's versatile, delicious and goes with everything - I should know I grew up on it! Corn is a food from the New World-it only came to Italy after the discovery of the Americas. But you could never tell the people from Friuli-Venezia Giulia, the region I hail from, that polenta is not Friulian. So much so that the Friulianos are called polentoni, polenta eaters. Join me in my kitchen as I show you how to make one of my favorite variations. Momma was very traditional about her polenta. Although she didn’t turn it out onto a board for family to eat from, she served it in a shallow dish, topped with a homemade bolognese type meaty sauce. Topped with grated cheese. My Momma used to take the leftovers and spread it on a cookie sheet (like you did) and put in the refrigerator, next morning she would cut it into squares and dip in egg mixture with cinnamon, sugar and vanilla. French toast for breakfast. Breakfast sausage and bacon! Wow… great memories. Grazie!

I don't think the bacon “ruins” the dish. Maybe me, Italian like Lidia, but I'm from another region, personally wouldn't have put broccoli and bacon with the polenta, but I would have used something else, like a nice meat ragù, or a mushroom ragù or something like that. Broccoli with polenta is not at all usual. They are usually made with pasta. However, in the end the polenta adapts to different variations. You can make a lot of dishes with polenta.
Lidia cooks from the region she grew in, northern Italy. Each region cooks with what is native to the region. My family is from Calabria and Naples. We put the meaty tomato sauce over the polenta. One is not better than the other. It’s what you grew up with. Even though my family cooked differently, I kinda like that combo. But I don’t like the grease. I would have drained it. Open your mind to variety. You may be surprised.
