The Best Creamy Coleslaw Recipe

  • This delicious refreshing Memphis style creamy coleslaw recipe is the perfect side dish to any friends and family backyard get together
    Coleslaw has origins all the way back to ancient Rome, but the dish as we now know it in the United States can be traced to Dutch settlers. They have recipes stemming back to the late 1700s for both mayonnaise and vinegar coleslaw.
    Ingredients for this recipe:
    For the Dressing:
    • 2/3 cup mayonnaise
    • 3 tablespoons buttermilk
    • 2 tablespoon apple cider vinegar
    • 1 tablespoons sugar
    • salt and pepper to taste
    For the Vegetables:
    • ½ head thinly sliced green cabbage
    • ¼ head thinly sliced red cabbage
    • 3 peeled julienne carrots
    • ½ peeled and thinly sliced yellow onion
    • ¼ cup thinly sliced green onions
    • 1 teaspoon celery seed
    • salt and pepper to taste
    Serves 8
    Prep Time: 15 minutes
    Cook Time: 0
    Procedures:
    1. Dressing: Combine all the ingredients into a medium-size bowl and whisk together until combined. Refrigerate until ready to use.
    2. Vegetables: Combine everything together in a large bowl and coat the outside of the bowl with dressing and mix gently with tongs until completely combined. If you want to salt the cabbages and carrots, see above in the blog post for procedures.
    3. Garnish the coleslaw with more sliced green onions.
    Chef Notes:
    Make-Ahead: You can make this recipe up to 2 hours ahead of time, but it is best to dress and mix right before serving.
    How to Store: It is best if you can keep the dressing separate from the vegetables and cover both and keep it in the refrigerator for up to 3 days.
    Salting the cabbages and carrots will make the coleslaw a bit saltier.
    Feel free to add more ingredients such as bell peppers, jalapeños, celery, etc.
    It is vital that you season and dress the coleslaw only right before serving.
    If the coleslaw sits for too long liquid will form at the bottom of the bowl. The best way to counter that is by draining and re-tossing in 2-3 tablespoons more dressing.

    AHHHHH!!!! The mandolin!!! I'm a "seasoned" cook Please, please respect and be VERY cautious. Once I lost a chunk of my thumb, I decided to go with my knife skills instead. Those are no joke.     I just made this. I didn’t have buttermilk so I added cream of tartar to the milk. Great substitute! Thanks for the recipe!! Bar-B-Cue sammys for dinner 😋

    As a critical person I have to give credit where it’s due. You make the best coleslaw on the internet hands down. Your technique is elegant simple and very important.
    I made a simple rustic version with just cabbage carrots fresh black pepper mayo and lemon wherein I considered adding the wet ingredients right before serving it came out excellent the black pepper married well with the raw cabbage flavor and the coarseness and simplicity of that make a great coleslaw. I’m stealing your version and adding honey and removing sugar for my shrimp tacos tonight

    I just made this recipe ad was absolutely the best. The only thing I had to change up was the buttermilk to sour cream. I was all I had😂. Saved this I couldn't stop eating it. I did add thin slices of green pepper too....😊

    I certainly Did Learn Something! WOW! That looked so delicious! Just the trick with draining the cabbage and using a mandolin and putting the dressing on just before serving!       I add plain Dan on yogurt to the mayo and one tablespoon of olive oil. Works well.

      I actually prefer mine with the sour cream instead of buttermilk. Makes it even creamier and less watery.

      If you don't have or can't find buttermilk, put some heavy cream in a Mason jar and shake for 15 minutes. Then separate the butter from the butter mil

    I make mine almost the same way . I also add fresh lemon or lime juice and less vinegar. One other note I let it sit in cooler for at least 4 hours before using I’ll then drain off water released by cabbage from the salt and redress if needed

    Years ago my family would go to a hole in the wall restaurant for all u can eat fish and chips, the Cole slaw was cut in small chunks instead of shredded, they use a vinaigrette type dressing and there was a spice he put in it that made that slaw special. The best I ever ate never tasted it anywhere else.

    Growing up, cabbage wasn't eaten as coleslaw so my early experience with it was through a yearly KFC treat meal. I make mine similarly but there's less sweetness with a different cabbage cut. The core reminds me of kohlrabi, so I eat it as a snack during prep. A quality mandoline slicer is pricey and not of plastic.

    Add half a jalapeño. Gives it a slight bite, but does not overwhelm because of mayo. So good.

    When my mom used to make slaw we would always fight over the core. It is pretty good sprinkled with a little salt!

    Looks good, but one suggestion - if you are quartering the cabbage through the core anyhow, don’t remove the core until after it is quartered. Then lay it one of the cut sides down on the board and a simple angled knife cut will remove the core from that piece. Same with the other three quarters. A bit easier and the same number of knife cuts.
    BTW, around our house it’s called Cold Slop.
