    Recipe :
    Aloo Biryani
    Preparation Time: 15 minutes
    Cooking Time: 40 minutes
    Ingredients:
    1/2 kg potatoes
    for marination:
    ¼ cup curd
    Coriander leaves
    2 tbsp ginger garlic paste
    1 tsp coriander powder
    1 tsp kashmiri red chilli powder
    2 tsp biryani masala
    1 tsp black pepper powder
    ¼ cup fried onions
    1 tbsp lemon juice
    2 tbsp chopped coriander leaves
    1 tsp salt
    ¼ tsp turmeric powder
    for rice:
    1 ½ cup basmati rice
    6 cup water
    2 black cardamom
    1 Mace
    3-4 green cardamoms
    4 cloves
    1 inch cinnamon
    2 bay leaf
    ½ tsp caraway seeds
    1 tsp salt
    for gravy:
    2 tbsp ghee
    2 black cardamom
    1 Mace
    3-4 green cardamoms
    4 cloves
    1 inch cinnamon
    2 bay leaf
    ½ tsp caraway seeds
    1 onion (sliced)
    1 tsp ginger garlic paste
    ½ tsp salt
    for layering:
    4 tbsp fried onion
    2 tbsp coriander
    ¼ cup saffron milk
    4 tbsp ghee
    Method:
    Wash the rice well and soak the rice in 4 cups water.
    Peel the potatoes and poke with a fork on all sides.
    Heat 2 tbsp oil in a pan. lightly fry the potatoes on medium flame till golden in colour and crisp.
    Remove from fire.
    Take 1 cup curd in a bowl. Add the biryani masala, coriander powder chilli powder, kasuri lemon juice and 1 tsp salt.
    Mix well making sure all the spices are well combined.
    add in roasted aloo and give a good mix. cover and marinate for 30 minutes.
    In a large pan bring to boil 6 cups water.
    Add the spices mentioned for the rice.
    When it comes to a boil, add salt and then the soaked rice.
    Boil the rice until rice is half cooked. Drain the rice and keep aside 1 cup of the drained water.
    Heat 2 tbsp oil in a pan.
    add 2 bay leaes, 4 cloves, 1 mace, 2 pods cardamom, 2 black cardamom, 1 inch cinnamon, ½ tsp shah jeera. saute on low flame.
    Add 1 onion and saute until the onions turn golden.
    Now add in the prepared marinated mixture.
    Mix well making sure everything is well combined.
    Cover and cook for 8 minutes or until potatoes are cooked yet firm.
    Remove from fire.
    Spread half the rice in a heavy bottomed pan. spread prepared potato mix. sprinkle 2 tbsp fried onions and coriander leaves. Cover with remaining rice.
    top with 2 tbsp coriander, 2 tbsp fried onions, ¼ cup saffron milk and 4 tbsp ghee. Cover with aluminium foil or seal the pot with dough and close the lid.
    simmer for 20 minutes or until rice is cooked fully.
    Enjoy aloo dum biryani with raita.
