Long hips you always need to string. Most of the time I'll set the jacks on layout, nail them to the plate, then set the jacks cheek cut to the hip and align with string and nail cheek cut to hip.
Nails are still accepted by both code and common practice. Screws cost more, take additional tools. Cost not a factor screws will perform as well as nails

Why does one end of the mock up , hip rafters seem not to have the overhang. Looks flush with the wall corner.
It's just a slight (3" overhang) and might be the angle of the camera shot. Otherwise all overhangs will be the same on a full size roof.
