    Thanks for this and the Flat white video. I really struggle with the milk side of it. I like a hot coffee (given it takes longer to make on these machines over pod machines that I have recently switched from, and I would like to enjoy it longer so try and increase the temperature slightly!) and so often end up with the milk over stretched and more ‘peaky’ than I would like!

      Hi Ian, I think many people do, it seems like such a simple thing but actually it's not, there's such a knack to it. Yeah to avoid overstretching, just keep the aeration (ripping paper sound) going for a shorter amount of time, then stop it by raising the jug so there's no more air being pulled in. I'd recommend timing it (just make sure you use the same amount of milk each time) and then adjusting the stretching time based on the results. Cheers, Kev.

    Thanks for this video Kev, I have found your advice so helpful on everything 'coffee'
    I have a Delonghi Dedica which was very easy to froth the milk, and I loved it, bought it during lockdown.
    After a lot of thought and research I have just treated myself to my first Sage and got the Duo - Temp Pro (and smart grinder I hasten to add ..... love that) I know in terms of machine it is still an Espresso machine, but I have a bit more control, and it looks much more impressive on my worktop. But, using the wand for the first time I thought 'what have I done, why did i buy this, I can't get the microfoam?'
    Then I thought 'Kev will help' and you have.
    I will practice (and probably fail a lot too) until I get it right

    Another great video Kev. These are really useful. Can I ask, with the long glasses, what do you pull your shot into as I assume they are too tall to fit under the portafilter. I assume that you pre-warm the glasses too.

      I use a shot glass, my favourite is the Rhinowares shot measure bit.ly/3AZgMq4 , you should definitely pre-warm the glasses, yeah. Cheers

    I have a question. Are you sure the 8 second infusion time is included in the 32 seconds? Isn't that too fast?

    Hey, Kev.
    Love your stuff and sorry to be pedantic, but the correct name for the drink is 'caffè latte' not 'latte'. Latte is simply italian for milk.

      Cheers :-). Yeah of course. If I was in Italy I would probably ask for a Caffe Latte to make sure I don't end up with a glass of milk ;-).
