There's a lot of great fan-created content out there. One of the most well known is "End of the Line," and does a fantastic job of capturing the essence of the universe. There's also a film-length project that does a hard 180 into psychological horror, called "Emesis Blue." And just for fun, I'd recommend "Overwatch vs TF2" parts 1 and 2.
about the bread thing in tf2... well... there isn't anything that important, at most a lot of memes... but not only that, in the game there are some: bread cosmetics/hats(Bread Heads, Bread Biter, Breadcrab and Loaf Loafers). a taunt, a map, and there are weapon reskins for heavy, spy, scout and sniper that is the bread monster(Bread Bite, Snack Attack, Mutated Milk and Self-Aware Beauty Mark). There are many more things in the steam workshop made by the community but I just mentioned what is in the game. and an honorable mention for a custom map on steam workshop that recreates the bread monster fight in the game... it is not a multiplayer map, and it is not in the game, only if you download it on steam workshop (the name of the map is ''Bread Monster fight''). *Fun fact: Expiration Date was supposed to be a pilot episode for a TF2 tv show in adult swim, but got canceled due to the fact that Valve couldn't keep up with the due dates and then adult swim lost interest... and this episode was supposed to be more minutes long*

As for fan content there is a lot of fan source filmmaker videos, I’d recommend anything by “The Winglet” and Lazy Purple’s “How it feels to play” series. Also yes Nolan North does voice characters for TF2, but he only voiced a few lines for Soldier in this short, Soldier’s main Voice actor was the late great Rick May (R.I.P).
Fun fact: TF2 was supposed to have an Adult Swim series at one point in the same style as the meet the team videos. Thing is Valve notoriously sucks at working with third parties, so the project fell through. Expiration date was supposed to be the pilot episode but was released as a standalone animation with an update because it was the only thing Valve bothered to finish after cancellation.

The guys are all mercenaries who in the game at this time all work for two rich brothers named Redmond and Blutarch (Red V Blue) That said, what they are doing is HIGHLY ILLEGAL! The bread is just a front. A phony business to hide behind to make themselves seem legitimate, at least that is the most sensible explanation given the context of the short. This video was originally going to be the pilot for a TF2 series on Adult Swim but the plug was pulled due to the production schedule. So the short was recycled and released to coincide with a major update for the game known as "The Bread Update" Several bread-themed items from weapons to cosmetics were added into the game as reskins of previous items, along with an amazing easter egg when someone would use the teleporter. Each time someone popped out of a teleporter exit, a random bread item would typically pop out with them. A little nod to the untold amount of bread Soldier spent three whole days teleporting which is now likely stuck in some sort of purgatory bread hell.The Bread update was just another of many campy and fun updates that TF2 has gone through, but there is no symbolism or greater function within the universe. It's just bread. That's why it's funny.
I highly suggest watching Lazy Purple's "how it feels" series. It's absolutely fantastic. Additionally there's a ton of fan content to watch. Plenty of comments have commented on multiple TF2 videos to watch. All of them. All of them are worth it.
