    WOW, he did it!!!!. He beat the system that tried to take him down and came out the other end of that journey stronger. He should write a book, do seminars, or sell a course on how to start up a business in the 21st century. Art of the Peel.

    What you guys have gone through would be hard to believe if you hadn't recorded it. Even your grandkids are going to have a hard time saying "I don't have time" after watching your journey. And all of us who have followed you on this journey should be ashamed if we ever utter those four words. Makes me reflect on a time in my life when I was up at 5 am and didn't get back home till 10:30 pm with no one to do the grocery shopping for me and the stores were no longer open when I was off work, no one to clean the house, do laundry, make meals, empty the cat litter and a 10 yr old feeding himself and getting himself to school etc. Just so I could bring home 1600/mo with the rent 1,000. With all those thoughts watching your journey has always put a smile on my heart and so glad you have shared. But I have an idea of how this journey feels. Blessings for you and yours.

    I didn’t want it to end. I have to say I had tears in my eyes seeing the new space. I’m now happy you hadn’t given us an update lately because seeing it all finished was such a surprise. You both must be so proud (and relieved 😉) I am proud to have had just a tiny part in helping you make this happen 🙏 🥳 🍾✌️💚

    I am 58 and have made a basic yeast bread and yeast rolls since I was 7 years old when I made my first four loaf recipe with only guidance from my Mom. She learned from her Aunt and Uncle how to bake most baked goods from scratch as did I when it was my turn. They never bought bread. They mostly made potato bread. They canned all their own vegetables and fruit. Bought their meat from a butcher and got their milk from a dairy farm that had a drive thru built into the pasture off their farm, all of this in SoCal back in the 1960's. They are all gone now. I'm the age they were then and I miss them so much.

    Congratulations to you ....I would suggest that you wear a mask only because when you pour the flour the dust is being inhaled by you and if this is done after many years it may impact your health as you get older...only a suggestion but I do wish you all the best...I do have a tremendous respect for you as you work very very hard.

    If you want to up the level even more in the "bucket filing station" you could have an electrovalve on the faucet and a sensor that measures the weight of the water and have a small numpad where dial in some number and the valve opens and let's water run until the selected weight is reached. It would be quite easy to do and it would be so cool

    This is an amazing setup, never seen a bakery so clean and spacious. I have a levain machine at my work place and I can't say I like it, it's hard to clean and difficult to gauge how much is left inside so you can't be precise with innoculation percentages. It's an older model though so hopefully you find yours actually helps with production, I still find the old school way of putting in containers better because you can easily see when it's peaked

    Your home bakery was the proving ground that enabled you to design an efficient store front bakery based on everything you learned. I can't imagine a better implementation than you have here, but I'll bet your continuous improvement mindset will show me what's possible. Congratulations!
