French Beans Belacan [Nyonya Cooking]

  • Vegetables cooked with “Belacan” (shrimp paste) never fail to stir up the appetite. This is one of the Malaysian favourites. A spicy vegetables dish with an amazing taste.

    Belacan can be very pungent. The smell itself can be such a turn off, especially to those who have no love for it! However, shrimp paste or belacan actually enhances the flavours of many dishes in the Malaysian cuisine.
    One extremely famous vegetable dish cooked with belacan is “Kangkung Belacan” which uses water spinach. For this recipe, I opted for french beans instead. French beans are crunchier whereas kangkung, a leafy vegetable, is usually much softer after cooking. The crunchiness of the french beans together with the dried shrimps give more texture to this delicious dish.

    Interesting way to prepare vegetables. Nyonya cuisine feels somewhat underrated in europe, and certainly deserves a spot on the list over best cuisines.

    Made this exactly as you mentioned but with 500g of kangkung instead of French beans. Came out wonderfully. I had to take out a handful of kangkung as I could not toss the vegetable. I should have just left it in the pan to wilt before tossing it. There’s always a next time to get it right as this recipe is a keeper. Thanks for the simple explanation. 👍🏽👍🏽👍🏽

    Not many people know about the nyonya cuisine actually. This dish is however, not really a nyonya speciality but more known to be a malay speciality. Of course, you can also find this dish in most chinese restaurants too. Ah, the beauty of many cultures at one place :)

    It is important to fry the prawn mixture first until fragrant or "pecah minyak" as the malay says it. If I add the balacan powder together, I find that the belacan taste tend to sink in. Hence, the taste of the belacan is just not there.

    Belacan is actually shrimp paste. I think it is called as terasi in Indonesia.

    Long beans are, longer. The shorter ones are known as french beans. Hehe

    It depend on what you mean by chinese. Here most chinese restaurants are operated by Vietnamese immigrant who rely on serving 80s style "chop suey", rather than delicious homemade vietnamese cuisine.
    The few authentic ones we do have serve mostly cantonese specialties. Which leaves us with only one option. Take things in our own hands. well a little fusion here and there catch the best from each part of asia still don't hurt:) The Kristang cuisine is also largely missed (portugues style).

    Ya, my friend told me got seedand told me need to soak in hot water to remove and agar agar the asam gravy

    You tamarind got seeds? Then yea..soak in hot water but dun need so much water. Use a spoon to stir and remove the seeds. It will be like a brown gravy ;)

    These are NOT French beans .... these are normal green beans ... French beans are half that thick ... and LOT MORE TASTEYER ....

      Hmmm...you can. Not sure if it fits. Usually, its cooked with lady fingers too. You can of course try using cabbage :)

    Why do you add the belacan powder after frying the mixture and not add it together with the prawn mixture earlier ? Is there a significant difference if i mix it first then fry ? Thanks...

I want to make the asam prawns too! =p ok, the balachan for string beans thump size ? the tamarind paste have to soak to squeeze till it becomes sauce like? but not too much also right? maybe I should estimate then learn from mistake! lol
