    Bio:
    Born in Cannes and raised in Geneva, Chef Amaury began his first apprenticeship in pastry at 13 years old and carved a path for himself at tremendous speed, winning the national “Meilleur Apprenti de France” award and becoming one of the youngest executive pastry chefs in the country by the time he was 21.
    Guichon then began his “American adventure,” trading Paris for Las Vegas and a position at the Jean-Phillipe Patisserie at the Aria, one of the best pastry programs in a notoriously sweet-toothed city. After hours, he began honing his epic decorative style while staying true to his commitment to French technique and outstanding texture and flavor. One day, he started recording his experiments and personal projects to social media. The rest is Insta-history.
    Chef Guichon shares the expertise developed in his whirlwind 17 year career in pastry with the next generation at the Pastry Academy by Amaury Guichon in Las Vegas. The 10-week program, designed in collaboration with Chef Michel Ernots, combines the technical know-how of an old-world pastry program with new-world creativity and decoration.

    Bro is a chef, an artist and an engineer, it's too much talent. And the best of all, he's not arrogant or rude about it. He passes knowlegde forward with such kindness and patience and makes sure everybody is actually learning from the experience. I'd love to have him as a professor even if I can't cook at all.

    The way he handles the students and Teaches is EVERYTHING I want in a cooking show. I want a winner, but I want others to grow and not just lose.

      Exactly. That’s what I love about it. It’s supposed to be a healthy competition with a good and friendly atmosphere. Not something that will make you feel condemned for life when you lose

    The School of Chocolate on Netflix was just refreshing, enjoyable ,and educational .Having watch many of the competition shows dealing with food on TV and Netflix, this was definitely the best of them all. Chef Amaury was was an un-bias judge, fair in selecting the winner Juan.His two assistants did their job well, no pressure on the contestants,,allowed them to work without undue pressure.Hs leadership skills are superb and his knowledge to share with the other Chefs is to be commended. He definitely has a GOD Given Talent of what he does and his desire to share with others is great for mankind. I watch the show continuous to very last episode because it was just that great of a show. Chef Amaury Guichon is truly a Genuis at what he does and his creation of art with Chocolate is just exquisite.Can't wait for next season.

    Ive been following this guy 4 years since i first saw clips of him on tumblr calling him chocolate guy (2 this day, most people on the site refer 2 him as "chocolate guy" as a kind of affectionate nickname) and i really admire his work.
    So many other kinds of elaborate chocolate/pastry designs are like a simple base with a mountain of icing or fondant but guichon stands out because his desserts are so layered, its not just a single cookie or 2 inch layer of vanilla cake its thin wafers, caramel cores, rich looking mousse, fruit bases and drizzles and all coated in delicious looking chocolate.
    Ive seen many chocolate creations that impressed me because of how grand they were, but amuary guichons creations are one of the few examples of desserts that ive wanted 2 truly devour. It always stood out 2 me that he actually ate his creations at the end. Sorry that this comment is so long and rambling it just feels really exciting to see a chef ive always admire really come in2 the public eye and 2 have other appreciate his talent as well!

      I totally agree with you. There is some american chef that do great design but they rarely seem delicious to me. Amaury's creation always seems as tastefull as they are beautifull and this is truly amazing. It's like he took the best of french and american pastry.

    I love how he explained that the dessert should be an experience and make sense. When you bite into the shell dessert, you expect coconut or something tropical. He's not gonna give you a shell and then have it be a pumpkin or pistachio flavored treat.

    I love this show. As a viewer, I learned a lot of techniques from Amaury. Also I love the vibe in the kitchen where chef Amaury can come in anytime to help them with stuff. (I mean duh it’s a school) It just makes things less… competition-y and I love that

    I have no desire to learn any of this but I'd attend just to hear him explain it all. His School of Chocolate showcases not just his talent for doing & teaching but also in being human. So much talent minus the annoying ego of other chefs.

    I love how humble he is and how he doesn’t diss the other culture way of techniques he embraces the American and French techniques with respect.His show on Netflix made me love this man the way he treated those contestants and how he teaches them and even the ones that didn’t win the challenge he gave them credit when they did a good job which made them not give up.This man is such a blessing !

    This guy always impresses me. His work is just unbelievable. Rarely am I awed, but every time I see him at his craft, my mind is blown at his skills and knowledge. He is definitely more than a pastry chef; he is an artist, visionary, and sculpture!

    This was by far the best video by Amaury not because of his creation, but because he describes in detail what he’s doing and why. If all of his videos were like this, viewership would soar because I think we all want to know how he’s doing this and why, i.e. why, for example, did he cut a hole in the shell. I found this video especially interesting because I now realized that he is blast freezing his creations in order to be able to work on them later. Well done Amaury.

    Love his art! Just binged watched his show in Netflix and was one of the best I have watched this year. Love his always gentle spirit and mostly loved the fact that he not once made the contest9feel bad, just the opposite, he build them! Such an inspiration not just an artist, chocolatier, but most importantly his gentle spirit! Can’t wait for another series. Sign me up!

    His accent is as delicious as his skills. Watching him work, hearing him describe his art, is such a treat and so happy his videos came up and subscribed. I subscribe to many artists and he’s the first with food. He inspires me to be better in my art hobby.

    I absolutely loved this show! It's my favorite of them all. It's a joy to watch an artistic genius at work, willing to pass along his wisdom and practical experience. I also really loved the way he worked to understand his students, to better know how to reach them, especially if they were struggling... vs. the usual egomaniacs who merely criticize. Clearly, his motivation is not only to create works of art, but to influence and shape future artists, as well. That, in itself, is the rarest gift of all. When can we expect a Season Two? Soon, I hope!? Please!!

    Nevermind all that everyone else says about his demeanor, skill, and teaching ability--the fact these very theatrical desserts are all EDIBLE components is the impressive part. It's not unflavored sponge, sculpted fondant and cold, dyed buttercreme holding everything together. Every piece is chocolate or intentionally flavored, intended that every bit your eye enjoys your tongue can be treated to as well, and THAT is the seriously impressive part.

    Your creations, so lifelike and beautiful, almost too much so to eat… I just have one question… if you have a fairly difficult piece, like the shell with the foam, how do you handle multiple orders at once? Those things take time…
    Full of admiration, there are probably more pastry chefs with your skills but so much kudoos for putting yourself out there!

    YES!!!! Teach problem solving!!! If you give a man a fish you feed him for a day. If you teach a man to fish you feed him for a lifetime.
    Most teaching these days is giving people information and having them memorize. But one day if they forget, how do they find the information again. With my ADHD I have so much trouble learning.... But if someone had taken the time to connect my learning in a way that I can find it again in case I forget then I would have retained SO much more!!!
