Hola compañeros en las artes culinariàs,sabed de mìmpuño y letra ,que soy çocinero ,dresde que me inicie en la cocìna,a los escasos,14 años,habiendo cono cido la pasteleria,a. Los 6 años,abase de limpiar muchisimas placas de boyeria,hojaldres,y muchos moldes de pasteles,sin estropear ningun utensilio,.
Luego pase los periodos de vacaciones escolares,trabajando ,en cafeteras,bares y restaurantes,de PALAMOS,LO CUAL AMPLIO MIS CONOCIMIENTOS,DE ""EL SERVICIO DE HOSTELERIA""LO CUAAL SIN ESTUDIAR IDIOMAS,ALGO APRENDI DEL CONTACTO CON LOS CLIENTES QÙE NOS VISITABAN MAS AMENUDO.
Y empece la cocina,a los 14 años con un gran coconero empresario,llamado,SALVADOR SERRA TARDITI,Y ERA MUY BUENAA PERSONA Y MAESTRO DE LA COCINA.
Fuy cambiando de casas,con la sana intencion,de adquiri mas conocimientos culinarios,incluida la pasteleria y reposteria .
Hasta que a los 27 años,me di cuenta ,al preguntarme,por que un señor como POL BOCUSSE,ERA TAN CONOCIDO,TAN FAMOSO,COMO GERARD TAMBIEN,Y OTROS MAS.
Me dì cuenta,,que la cocina era crear novedades continuamente y deliciosas,tanto para la vista,como el paladar,
No sin saber ,que no podias hacer segun que mezclas,para preservar la salud de los comensales,haciendo amigos de distintas partes de la peninsula,que venian. ,mesaludaban,venian averme y disfrutar de la cocina que yo ejercia,me felicitaban,y volvian.
Loo que mas me gusta,es hacer cocina creativa,
Por ejemplo el filete de ternera con fresones al rocafort,y arroz blanco a la naranja de guarnicion,o el lenguado con peras al casis y guaarnicion de florones de hojaldre,etc,etc.
En casa hago el pan,muchas veces.
Hoy mismo he tenido el placer de hacer ( brunyols de l'emporda ) buñuelos del amporda,y he hecho 6 kilos de masa para hacerlos,son muchos buñuelos lo se,pero tengo amigosy familia y reparto mucho pan i buñuelos,o tartras y pasteles.
Este personaje ,soy yo LUIS MONTOYA GARCIA.
QUE SIEMPRE HE ACONSEJADO A MIS COMPAÑEROS QUE DESARROLLEN LA CREATIVIDAD ,EN SUS EXPRESIONES DE TRABAJO CULINARIO,HACEDLO VOSOTROS TAMBIEN,ES MI CONSEJO.
SE TU MAESTRO,Y SERAS MAS FELIZ.
