Thai Cucumber Salad
Serves 3-4 people
5 TBS. Sugar
1 Long, skinny cucumber (thinly sliced)
1C. Boiling Water
1 tsp. Salt
3-5 Chiles, seeded and finely chopped
3 Shallots, thinly sliced
1/2 C. White Vinegar
Preparation: Put cucumbers in a bowl. Dissolve sugar in water. Site in vinegar and salt. Pour over cucumbers. Sprinkle shallots and chiles over cucumbers. Chill and Serve.

One of the sweetest memories I have of my dad was his excitement when he harvested his huge crop of potatoes. My daughter was three and he had her out in that bed digging away. Both of them were covered in dirt. I'd hear squeals of delight as another jumbo popped to the surface.
He taught me the best way to bake potatoes and the yummiest way to eat them. Growing, harvesting and eating homegrown good was always exciting because of his enthusiasm. I miss him very much.

They joy of picking something from the garden to make a recipe on the fly is amazing! We made homemade Picco for tacos last night and I told my husband everything we need is in the garden. No store runs or anything! Pure joy

Oh my how bountiful you were blessed for all your hard work! When I was raising my 4 kids we had a garden and the potato harvest was very important. We had two boys and two girls. The boys are non-stop!!! The Lord blessed us. I canned and we raised pigs and cows to eat. I miss those days. I’m riding your coat tail to remember those days. Thanks so much guys ❤

I remember harvesting potatoes with my Dad many years ago from our family garden. Wonderful memories of working in the vegetable garden.
I love the funny shaped potatoes! I grew up in southeastern Idaho where sooooo many Russets are grown. We were out of school for two weeks at the end of September and beginning of October to work in potato harvest. I remember contests at school where those weird potatoes were decorated, weighed, and measured in all sorts of categories. Good memories!
Your dad needs to receive one of those mutant potatoes! Awesome harvest and always love seeing Benjamin help his mama!

Minus the Serrano peppers, this cucumber salad was one of my late father's favorite. I grew up with this dish in my parents house. Thanks for the reminder of that sweet memory.
Same. Slight variations depending on what was on hand. Sliced yellow onions can sub for shallots. Green pepper can swap for the red peppers. I like lots ground black pepper also, but my daughter doesn’t.
I thought it was the same as my grandparents but she used sour cream and a boat load of paprika in hers. Still a great memory.
I use red wine vinegar, a lot less sugar, little bit of carrots, salt, pepper, dill, sesame seeds.
We grew up having this too but no peppers and way less sugar. Now I use Rice or red wine vinegar. In my fridge now😋

I love seeing how you harvest, prepare and store things, much of it is brand new to me despite having tomato and peppers for decades. I'm determined to do some new things this year, and the information is so helpful. OH, got my Andrews Seed Company sweatshirt today in the mail! I LOVE IT! Planning to wear it on the first semi cool day (we're still hot here in ATL).

I made this Asian salad last night. It was a hit, so thankful for this recipe. I used a sweet onion instead of the shallots as that's what I had. What a fab recipe as all ingredients are ones that we have in the fridge most of the time. Thank you.
Just a suggestion, my husband puts the forks on the skid loader. He then goes backwards down the row and lifts them all up and it makes harvesting potatoes so much easier.

Oh that blue Hubbard is an amazing trap crop. I tried it for the first time this year and kicked myself in the pants for only planting one. Flipping squash vine borer took it out pretty early on, next year I’m planting 8 all around the garden border. 😊

Now that you have more of an established hard scape in your beautiful garden, do you plan on re-planting and designating a space for an asparagus bed in the spring?
I make a Thai Cucumber Salad like this one. Only real difference with mine is that it calls for crushed peanuts sprinkled on top when you serve it. The peanuts add some extra crunch and flavor and I love it!

Great potato harvest! Wow! I so wish I had root cellar to store things in massive quantities. Question Laura? Will you be drawing face’s on the potatoes and taking them and putting on your dads desk??? For the cucumber salad, we do cucumbers and onions in apple cider vinegar, add sugar and black pepper to your taste and let it sit overnight usually. Always a favorite in our family every year. Benjamin is so cute protecting the garden! Love your videos and never ever miss one! Have a awesome day!
