The first time I made this recipe I used chicken. My husband loved it and his secretary wanted the recipe. This time he asked me to make it with beef. I used grass fed sirloin. I did not have the right mushrooms so I used what he bought at HEB. I send him food for the week because I run the ranch and his office is in deep south Texas. The gist of his message to me was " Do it again. Keep that recipe." Thank you so much. You have made him a very satisfied man and I am a happy cook.

I added 2 fresh mushrooms to the veg and a 1/2 cup more cream. To jazz up my home made chicken stock I did add the 2 bay leafs and 5 large sprigs of Thyme from my garden. Even with these modifications, it was by far THE BEST POT PIE I’ve ever made!

Just made this tonight and it was absolutely fantastic. Thanks for another good one. I had to make some modifications though. 1. I used hydrated mushrooms (bellas and shiitakes). Still good, but next time I may dehydrate them myself. 2. I used chicken thighs (skin on) instead of a full chicken. Again, still very good. 3. I used a pie crust on top instead of a puff pastry. These three modifications were made simply due to the craziness at the stores right now. Everything turned out great and the flavor of the filling was phenomenal. My favorite cooking channel by far 👌🏼

The thing that makes some of the frozen food pot pie selections better than a lot of home made recipe versions is the fact that almost all of them come with a full pan crust, as opposed to having crust just on the top. For me, once the crust is gone, the rest of it might as well go in the trash, because if I can't have a bit of crust with every bite, I'll just go to Popeye's and get some good fried chicken.

If you're not sure if you can do this or not you can assemble a "home-made" pot-pie with completely pre-made ingredients as a way of getting your feet wet. It won't be nearly as good as I'm sure this is but it'll be a step away from the pre-made frozen pot pies.
Bag of frozen mixed vegetables, cream of whatever soup (chicken is pretty good), pre-cooked chicken (can get a whole pre-roasted one and disassemble or just get the pre-cooked meat), store bought biscuits (think something like Pillsburry biscuits in a can). Heat the soup, throw in the shredded chicken and bag of vegetables & mix thoroughly & add salt & pepper to taste along with whatever other seasonings you like (rosemary & thyme are pretty good here). Pour this into a 9x5" baking pan and then top with the biscuits...can cut these up to get greater coverage but it's not necessary. Then just bake as per the biscuit directions (in terms of temp) until they're golden brown. Let cool for a couple of minutes & serve.
This was kinda a staple around my house growing up once my dad learned how to do this...pretty sure he got the recipe off of a package of Grand's Biscuits actually. Worlds better than the pre-made frozen pot-pies though also not nearly as homemade as the Joshua's.

Made this yesterday,(OH AND NO HAM!!!) I added dry white wine to the broth, along with some of the juices from the cooked chicken. Yes, the dried mushrooms are imperative. I was tempted to omit. I added 1 stalk of celery to broth/sauce and removed it before combining. Only change for us(my husband like well cooked peas) is I'll steam peas a little first. I added more carrot>my husband loves. I used all heavy cream, 2 cups. (I had extra broth) I used puff paste this time but will make a sturdy pastry next time. This was soooo good. There were no whole chickens at my store so I used large organ thighs and breasts, and did use the crisp skin inside and also some chopped on top when serving.
