Gluten-Free Red Velvet Cake: A Delicious Twist on a Classic!

    Red Velvet Cake 🍰
    2 1/2 cups of flour (I usedCup4Cup Gluten Free Flour)
    1 tbs cocoa powder
    1 tbs baking powder
    1/2 teaspoon salt
    1 cup of sugar
    3/4 cups coconut oil
    2 tsp vanilla extract
    4 eggs
    1/2 cup melted butter
    1 cup of buttermilk, if you don’t have buttermilk just add 1 tablespoon of white vinegar to the milk
    For the frosting:
    Zest of 1 lemon
    32 oz of cream cheese
    1 cup condensed milk
    How to prepare:
    Sift the flour, baking powder, salt and chocolate powder. Set aside. Into the blender add the buttermilk, the sugar, coconut oil, vanilla extract, eggs and melted butter. Blend for about 2 minutes. Divide the batter into two 9 inches baking pans coated with butter. Bake for approximately 30 minutes. In the meantime let’s make the frosting. Into the mixing bowl add the cream cheese, condensed milk and lemon zest. Mix for about 2 minutes. Set aside. Using a large serrated knife cut a thin layer of the cakes to create a flat surface. Place one cake layer on a serving plate and cover with 1/2 of the frosting. Add the 2nd cake layer and cover with remaining frosting and decorate however you prefer
