    Coxinha on the Bone
    10 chicken drumsticks seasoned with salt, garlic powder, onion powder, pepper and smoked paprika
    3 tablespoons olive
    6 medium potatoes
    1 cup of cheddar cheese
    1 cup mozzarella cheese
    Chopped parsley to taste
    Salt to taste
    For the bread crumbs
    1 cup of flour
    1 cup of breadcrumbs
    2 large eggs
    Oil to dip fry the coxinhas
    How to prepare:
    Heat up a pan with 3 tablespoons of olive oil and add the drumsticks. Sear for 5 minutes. Cover with water and let it cook for 10 minutes. Add the potatoes and cook for 15 to 25 minutes.
    Remove the chicken drumsticks from the pot and wait until it cools down. Remove the meat from the drumsticks with the help of a fork and save the bones. Smash the potatoes, add the chicken, cheddar cheese, mozzarella cheese, parsley, salt to taste and mix well. Mold the coxinha into the chicken bone, dip in the flour, egg wash and bread crumbs. Deep fry for approximately 2 to 3 minutes.

    Coxinha no Osso
    10 coxas de frango temperadas com sal, alho em pó, cebola em pó, pimenta e páprica defumada
    3 colheres de sopa de azeite
    6 batatas médias
    1 xícara de queijo cheddar
    1 xícara de queijo mussarela
    Salsinha picada a gosto
    Sal a gosto
    Para empanar:
    1 xícara de farinha de trigo da sua preferência usei sem glúten
    1 xícara de farinha de rosca da sua preferência, usei sem glúten
    2 ovos grandes
    Óleo para da sua preferência para fritar
    Como preparar:
    Aqueça uma panela com 3 colheres de azeite e acrescente as coxas de frango. Refogue por 5 minutos. Cubra com água e deixe cozinhar por 10 minutos. Adicione as batatas e cozinhe por 15 a 25 minutos.
    Retire as coxas de frango da panela e espere esfriar. Retire a carne das coxas com a ajuda de um garfo ou com as mãos mesmo, e reserve os ossos. Amasse as batatas e acrescente o frango, o queijo cheddar, o queijo mussarela, a salsinha e o sal a gosto. Misture bem e molde a coxinha no osso e passe na farinha, depois nos ovos e por ultimo na farinha de rosca. Frite por aproximadamente 2 a 3 minutos
