  • I thought I'd dedicate a whole day to making the most iconic dish from one of favorite Pixar films. Remy's ratatouille - the dish that can make even the toughest food critic cry.

    Perfect but I have one advice : cut the vegetables a day before, put some salt on it, spread them on the largest surface you can, and put them in the fridge overnight without lid. The fridge and salt will extract the water so the flavors are more concentrated and the final result is less soaky and more crispy.
    After that, take your vegetables, press them over sink (you can also use kitchen paper). And then place them standing up on your baking dish (so there is more contact with the heat from oven), with a layer of this red sauce you made an a drizzle of olive oil on top.

      interesting idea! but wouldn't it be bad for the vegetables to be left uncooked and exposed to air for 24 hrs? in my personal experience, this causes oxidation, especially in the eggplants (which basically means it won't taste as nice and it will lose much of its vibrant colour, tending instead towards brown, like when you leave a slice of apple out)

    Though the film was called Ratatouille, the dish itself is actually the rather closely related (but more visually pleasing) "tian", also from Provence, in the south of France. Yours looked really beautiful.

    Little mexican tip for the part where you were struggling to peel the peppers, put them in a plastic bag for a few minutes so they can "sweat", that helps the skin losen a little more so you can peel them easier ✨❤️

      It honestly takes just a few hours to make Ratatouille like this from scratch ! :O
      I've made it several times already. While the sauce reduces, you have plenty of time to cut the veggies with the mandolin, and then it's just a matter of fanning them onto the sauce, and hop ! In the oven it goes, while you enjoy a cup of whine and bossa nova music.

    Right when I saw the Ratatouille dish in the movie. I instantly wanted to try it. It looked so delicious! And when she was done with hers. I just wanted to go into the video and take the food. She did great on cooking that.

    This video was great! I love the music, shots, and the whole production! And, the food looks amazing! As someone who worked in many professional kitchens, that plating was awesome! I would like to offer a tip to anyone cooking out there. If you plan to remove the skin off of any pepper (tomatoes too) after roasting; cover them with plastic wrap after pulling them out of the oven, and leave out on the counter for a few minutes. Try to cover the entire pan/tray. You want to trap the steam so that it will pull the skin from the 'meat' of the vegetable, and make pulling the skin off super easy!

      @@virginiaviola5097 Sorta. I teach for a living. My 9 to 5 is work, my 5 to 9 is lesson prep. But even before that, I was working a couple jobs part time, with rent taking more than half my income and food costing about half of what was left, and then cell service and car insurance; I think the better question is what do *you* do such that you can relax?

      @@DeFaulty101 you might think I’m nuts for saying this, but relaxation is a state of mind! Take 15 minutes to sit in the garden and watch the birds, and do nothing else. It will, amongst many other things, make you a better teacher. When you live your job 24/7, it will eventually catch up with you...why do I have time now to relax? Because a broken body and PTSD put me out of the workforce long before I was ready to leave. And I live on air, I would love to have an income and not be so stressed minute to minute about how I’m going to pay the rent and buy food. But I still find that pulling up a couple of weeds, or watching a bird mother with her new chicks reminds me that we are part of something bigger than the rat wheel we often find ourselves in just trying to survive and get by. You aren’t trapped, not at all, just remember that. That’s how I felt, and it cost my my physical and mental health. The world will not stop turning if you take 15 or 20 minutes out of a day for yourself.

    Recipe
    Sauce: olive oil, onion cubes and garlic cubes, tomato chunks and tomato paste, wine (optional), parsley.
    The veggies: zucchini, yellow squash, tomato, eggplant slices.
    Veggie flavor sauce: olive oil, parsley, garlic.
    Idk the heat for the oven though.

      I’ve roasted Capsicums before (is what bell peppers are called in Australia) and 200 Celsius for about 30 mins is good

    Tip: After roasting peppers I usually put it in a heat safe bowl and cover with plastic wrap (Or something like a plate to trap the heat). The steam will help the skin pull away from the flesh making it easier to peel.

      Food is one of the few art forms known that needs to be broken into to be appreciated. But watching it come together before your very eyes, knowing that all your senses are coming in to bring it to life, is half the gratification.

    Ratatouille was the movie that got me into cooking. Even tho I was still pretty young when I watched it, it's been my favorite Pixar movie since it came out. I first watched it when I was around nine or ten and I'm fifteen now. I remember my dad making dinner as I watched it and coincidentally he was making Remy's Ratatouille. Anyways, this brought back so many memories of how much I loved watching the movie and listening to the passion he shared for food. Remy would be proud to see you make his dish.
