- The cake of the summer? I think so!! Or as Dane refers to it "a celebration of summer" đ„„đ. This cake really is all of that and a little more - 4 layers of coconut sponge, drenched in a pineapple syrup, filled to the brim with rum swiss meringue buttercream & pineapple jam, finished with toasted coconut and pineapple flowers - whats not to love?! Sponge:
330g Butter
135g Vegetable Oil
500g Caster Sugar
8 Eggs
100g Desiccated Coconut
400g Self-Raising Flour
6 tbsp Coconut Cream
1/2 tsp Vanilla
Pinch of Salt
Pineapple Jam:
600g Pineapple Chunks (Approx 3/4 Large Pineapple)
250g Water
420g Caster Sugar
1 Lime - Juice only
Pineapple Flowers:
1/4 Fresh Pineapple (use the same one as for the jam)
Rum Swiss Meringue Buttercream:
450g Caster Sugar
6 Egg Whites
600g Soft Unsalted Butter
1/4 tsp Salt
8-10 tbsp White Rum
To Decorate:
180g Desiccated Coconut

I made this the first time on the weekend and the jam, syrup, flowers and buttercream were to die for, but had no SR flour so made the sponge with plain flour + baking powder. They cratered and had a disastrous texture. I watched the sponge tutorial then went back to âsettle the scoreâ with the pinia colada sponge tonight, this time using SR flour and paying more attention to creaming butter, sugar and oil.
Well, this time the sponges turned out LIKE HEAVENLY CLOUD ANGEL SPONGE PILLOWS!!

Dane!!! You are the man! I made this cake for my birthday and it was a hit! The texture of the coconut flakes mixed with the pineapple goo and swiss meringue icing - chef's kiss! The only thing I would add is that those cake tins need to be lined. My cakes were kinda difficult to pry out but still an awesome result. I'm baking this again soon because why not?? This channel is the best!

I have Gemma's fav piping tip though I haven't used it đ€Šââïž I bought it to help me get the buttercreams on the sides of my cakes faster but I need to find a bigger piping bag because that's one big ole piping nozzle, lol. Never thought to use it the way Dane did for decorating. Love the look of that. Thanks for the idea... đ
Yeah, itâs really fun but you do need a lot of buttercream and a big piping bag to make it count. The wiggles are my favourite though!

Is it possible to do this recipe using 6 inch pans?
If I only have 2 cake pans, should I keep the other half of the batter at room temperature or fridge while waiting for the 2 to bake?
I would recommend splitting the recipe in half and preparing it in two stages. The raising agent in the flour will begin reacting once itâs mixed into the batter so you may end up with sunken cakes if you leave it waiting around x

Does replacing some butter with oil make it lighter or denser? Iâm guessing its because the coconut dries the sponge a little so the oil keeps it more wet but I just really want the sponge to be fluffy & am worried the oil will make it dense?

Dane when you made the buttercream how long do you beat meringue? Mine always ends up soft & soupy once adding butter. How cool should meringue be? I heat my eggs to 71 deg & beat meringue for 10-15 minutes but an still be quite warm. Can meringue be put in fridge to cool. Also how much do the 6 eggs weigh. This love all your videos
I used to have this problem. And yes, after 15 minutes of beating, it is still too hot. I just leave it on the counter, and let it cool until it reaches 28 C (82 F). At that point I add the butter which is cool, but not mushy (about 20 C / 68 F). The cooled butter brings down the meringue temp as it's added. I have never had a problem with SMB since allowing it to cool on its own. It is more time consuming, but it works.
