How to: Easy pressure cooker risotto

  • Today I will show you how to make a quick and easy risotto in a pressure cooker.
    Kuro (My cat) added some sound effects too...

    Ingredients & Recipe.
    Serves 4-6 people
    1 tbl spoon olive oil
    150g bacon/panchette cubes
    300g king prawns (cooked & peeled are best) these will be added aftercooking
    1 White onion chopped
    2 cups Aborio Risotto rice
    125ml dry white wine
    1.25 litres stock (I mix chicken & veg)
    40g parmesean cheese grated
    salt & pepper to taste
    if you want you can add 25g butter, I don't use it myself.
    Heat the oil in your pressure cooker
    add then saute oinions till translucent
    add bacon/panchette and cook for about 2-3 minutes till cooked but still soft
    add aborio rice and cook through for 2-3 minutes till all coated in the flavour from onions & pachetta
    once the rice appears dry again add the wine and cook for 2-3 minutes so the alcohol scent has died down
    add salt & pepper and mix
    pour in the stock, give a quick stir and close the lid
    set your pressure cooker to risotto function (if no function then you need 40kpa for 7 minutes and a quick steam release)
    once cooked add in your prawns & stir in the parmesean cheese, allow the residual heat to warm the prawns without over cooking them and melt the cheese.
    Your bacon & prawn risotto is ready, serve straight away and any left over can be stored in the fridge for upto 5 days in an air tight container.

    Number chart for cut scene workings of the Sage fast slow pro pressure cooker.
    1) Primary Safety Release Valve - The valve in the lid will release pressure if the internal pressure exceeds 15.95psi or 110kpa
    2) Secondary Safety Valve - Should the primary pressure regulating valve fail, the excess pressure pushes through the nub on the lid when the internal pressure exceeds 17.4psi or 120kpa.
    3) Valve cover - Small basket that prevents food from blocking the main pressure valve.
    4) Locking Lid - Mechanical lock that prevents the lid from being opened when the contents are under pressure - even without electricity.
    Lid Position Sensor- monitors whether the lidis in an unsafe zone for pressure cooking.
    5) Collapsing Gasket - Silicone gasket engineered to safely relieve pressure below a critical level and to act as a failsafe if all other apertures are blocked, without causing damage to the unit or the surroundings.
    6) Steam Temperature Sensor - monitors the temperature at the top of the enclosure to allow precise and accurate control of the pressure within the vessel temperature and ensures that it remains in a safe range.
    7) Vessel Temperature Sensor - monitors the rate of heating at the bottom of the vessel to optimize efficiency
    8) Thermal Fuses - protects the electronics from over-heating above a critical safety limit

    Can’t believe you don’t have more subscribers, you must be relatively new. Great presentation skills, natural, personable, clear and informative. Keep it up! I was debating about the purchase of the Sage but the brand history in the intro was so helpful, I’m investing.

    Great video buddy. I used my Sage Fast Slow Pro for the first time today to do a lamb shoulder casserole. It turned out great. The only tiny gripe I have, is that once the food was ready, it took 45 minutes for the pressure to release with the 'natural release' setting. Which release setting did you use here ? Thanks.

    Im thinking of getting the sage slow cooker plus i like the idea you can see whats going on while cooking with the clear lid, i almost want to go for this one in the video, but you cant keep an eye while cooking. 🤔

      You’re talking about the risotto plus, that one is good and I’d say probably the best appliance sage has ever made (it’s a great all round appliance) but in all honesty you don’t need to see what’s going on, it’s just going to bubble away (slow cook, steam, rice cook) it’s very much a set and forget kind of thing, the risotto plus is good appliance, whips up risotto in pretty much 15 mins, cooks rice, slow cooks and steams. If you’re thinking about the fast slow pro then it means you pressure cook and if you do you know how great it is, if you don’t pressure cook or want to then the risotto plus is a great machine for the kitchen 👍🏾

      @@daimingsing i guess just being old fashioned, i already have a pkp, a ninja foodie and a crockpot slow cooker, 2.4 lt which by the way i made roast potatoes in the other day worked really good. But I'll deffitnely think about both options.

      I'm truely an appliance geek as I have so many, I totally get where you're coming from, but I would say that pressure cooking has changed my life, and saved it on occasion too haha I still use slow cook sometimes but it's good to have that choice :)

    How do you fix the 'lid not sealed' issue. I have only used my appliance a handful of times and this comes up every time I try to pressure cook!

      You have to check the gasket, when I got my first fast slow pro i had this issue a few times, i spoke to Sage and they replaced it for me without any issues, however I'd suggest make sure your gasket is correctly on the lid to create that seal or you'll get the warning it hasn't come up to pressure, I always make sure I check the gasket before i use the pressure cook function as tit does become misplaced sometimes after use, try that and see how it goes for you

      @@daimingsing Thank you. I discovered that if I push down really hard when locking the lid, the pressure cooker works. The seal was always in properly when I got the 'lid not sealed' message.

    I'm curious if this would function well as a regular rice cooker? I would definitely use the other functions but we are looking to replace our existing rice cooker and thought I'd go for a fun toy. Thank you, Luke.

      Yes, there’s a dedicated rice function on this so it’s pretty much a powerhouse for most cooking needs in the kitchen, I couldn’t live without mine :)

    It's look good and though you list the ingredients what about the quantities particularly of rice to liquids or did I miss that but I watched the whole video?

      Hi Sharon, thats my bad, I generally eyeball because i'm so used to it, I do about 2 cups of rice and add stock to just above the level of the rice, i'll add a recipe list in the video description box, thanks for pointing it out, I totally missed it 👍🏾

    Loved that video! I do have a question though. When I make a risotto on the stove (constantly watching it and stirring as I gradually add the stock) I do add quite a bit of butter and you didn’t so it’s clearly a much healthier way to cook this dish. Do you add butter at all?

      I don't put any butter in but the pressure cooker agitates the rice so much that the starch gives it a creamy texture, when making it the conventional way you can use a splash of olive oil in place of the butter as the butter is more for the creamy texture than flavour.

    I wonder how to prepare Arborio risotto rice? Do we need to it clean first? Everything is new to me

      Thanks for checking out the video, thats a good question!
      You shouldnt rinse your Arborio rice because it's a very starchy rice which is ideal for risotto, the starch is what gives your risotto that lovely creamy consistency, just place your rice in the pot as usual without rinsing

      Hi, no it won't airfry because it doesn't use convection to cook, there are some airfryers that can do that (with the seperate lid) but this Sag one is a pressure cooker olnly so it uses water/steam and there for wouldn't crisp up any of the foods you mentioned, hope that helps answer?

      it's pretty good, very traditional in the sense that you have high and low, you dial it in by twisting the knob then pressing the button for which option you want, I don't use the slow cook function very often because I pressure cook, but if i'm prepping something over night i'll use it

      Glad you tried it and happy to hear that you love it! for the slow cook function as a general rule high will reach boiling point between 2-4 hours and low between 6-8 hours, from tere it's just a matter of doneness that you want pretty much.

      It’s a good size, yes I’m only using a small portion for the purpose of the video but I do multiple recipes and batch cook sometimes, it’s big enough for me to fit a whole medium sized chicken with some space.

    This is a nice cooker but the inner bowl has a cheap 'non-stick' (although it sticks) pot that CAN NOT BE REPLACED. The company does not maintain stock of spares - you will need a replacement after several months use SO BUYER BEWARE. I will never buy the Sage brand again.

      Michal Lozinski I’ve had my fast slow pro cooker for about 4 years now and never had an issue with the bowl, they do have replacement inner pots though £21 each so I’m not sure why you didn’t get one?
      I use my cooker quite frequently and it still looks new and shiny.
      Did you put yours in the dishwasher as I know that affects the nonstick coating, other than that I’m not sure why you had such a bad experience?
      After I first got mine there was an issue with the gasket but the machine was replaced by sage and I’ve never had any problems since.

      @@daimingsing - ignore him. He's posted the exact same angry quote on literally every single video r the Breville. I'm guessing he's not officially affiliated to Instant Pot, but he's clearly obsessed with trashing Sage/Breville. I have the SlowFast Pro and love it. I bought a spare non-stick like you did, but also a chef friend advised that any instant pressure-resistant pot will work. So I bought a stainless steel one, tested it with a few recipes in the Breville, and it's great. So now I have both... :) Love your channel and your v chilled home-chef presentation.
