      I don’t wanna be “that” guy, but actually I do. In order to cut potatoes into fries you need precise cuts and more of them. With separating chicken wings, you need less cuts and most of them don’t have to be as precise.

    The reason why the air fryed wings came out powdery is because you didn’t spray the wings with oil before you air fryed them (don’t use Pam! Use a refillable oil mister with light olive oil or canola oil). Makes a world of difference (air frying doesn’t mean “no oil”, rather, “significantly less oil”)

      Part of it was probably to add humor/variety, but I also suspect that there may have been things he meant to say/do during the cooking process that he forgot to add, and green-screened it in during post production.

    Just a tip for using your air fryer, Ian; try to spray some sort of spraycan oil to make sure the wings don't stick and have them come out crisper and nicer next time. While it seems a bit against the point of an air fryer, it's still substantially less oil than regular frying. It also helps experimenting with frying times and temperatures.

      It is basically a small convection oven. My real oven has a convection function that I use for some things, but I also have an air fryer because
      1. No waiting for it to preheat
      2. Don’t have to bust out cookie sheets and tin foil and whatever other junk you use in ovens
      3. Every oven I’ve ever had has added a lot of heat to my already usually too hot Texan kitchen. The air fryer does not. This pleases me.
      4. Makes me feel like a fancy wine mom even though I don’t drink and have one dog and zero children

      I came here to comment this. If you already own a convection oven these are kinda useless. ALSO people need to stop panicking over fat in their foods. An excess of ANY food source is unhealthy. It's all about balance.

      These and Toaster ovens are atleast handy if ya got a gas oven. When it's a hot day, you don't want to turn the gas oven on, heats up the whole house.

      And I've always called the drum bits 'drumettes' to distinguish them from the actual drumstick. Flat wings for life btw, drumettes get dry easier

      On some show we watched, a chef called them drummies and wingies, so that's what we call them. Wingies for me. More moist, better skin-to-meat ratio, and less non-edible cartilage. I can never seem to eat a drummy without having to spit something out.

    So the secret to frying with an air fryer is to "cheat" a little. Get a bottle to spray your oil of choice with, and before you put your food in you should spray down your food with the oil. Yeah, the oil's not completely cut out, but so long the flour is completely wet with no dry spots you're going to be cutting down the oil used significantly.
    When you go to shake the basket, that's really only meant for foods like french fries where meticulously flipping them all is a massive pain in the ass. Air fryers cook by convection, just like an oven and why they can turn out tasting like they're just baked if you're not careful, but they speed up the process by blowing hot air. You're cooking with a hair dryer, basically. So in order to evenly cook something like fried chicken, you need to turn them over so the hot air gets blown on all of the surfaces of the food.
    For cooking time, I highly suggest investing in a quick-read meat thermometer, you can get a good one for less than $15 off Amazon, it doesn't need to be fancy just accurate and quick enough to get you a temperature within 10 seconds or whatever since that really old thermometer you stole from your grandma will let you burn your food before it gives you an accurate reading. It can be a bit tricky finding surefire guides on how long to cook in air fryers since they're a somewhat recent thing, but what a lot of people do is overcook their chicken. Don't overcook your chicken, cook it to 165 F or even a little below at like 160 so long you're able to keep it at 160 for like five minutes. The lower the temperature of chicken, the more moist it is, but you need to have it hot enough to actually kill all the bacteria that want to kill you right back. A meat thermometer takes out the guesswork and will have you making much better tasting chicken more consistently while also being confident you're not poisoning everyone you're feeding.
    Also, I'm colorblind, so I kind of have to have a meat thermometer anyways because I can't see the color pink very well. Never trust a colorblind chef without a meat thermometer.
    Of course, the real pro move is to fry at the highest possible setting your air fryer can do (just like with your deep frier), wait until the skin gets perfect, and then take everything out and bake it until the chicken reaches 165 F. Air fryers are nice in that with a bit of practice with the temperature you can get the breading to get perfect just as the chicken itself hits 165. At this point you can put the chicken in an air fryer safe container so that the wind can't blow on it but the convection heat can still get to it so that it can just bake in there without the breading burning.
    The end result is what Ian said in the video, the spices in the breading are a lot easier to taste because it's not all lost in the oil bath you cooked it in. But because you applied some amount of oil to the surface of the food, it'll be properly crispy and have a great texture. It won't be quite on the level of a real deep frier as far as texture goes, but at least in my opinion the flavor itself is a lot better.
    Aside from that, air fryers are a lot easier to clean and just a lot more convenient. They shut themselves off, so you don't need to babysit them like you would with a deep fryer. No grease fires, you don't need to clean out your grease or waste an entire bottle of "health juice." You're not worrying about your sister's kid deciding to pour the whole thing on himself and needing a skin graft. The only real downside is that it can be hard to find a large enough air fryer to really handle feeding a group of people, which sucks since it can't cook quite as fast a deep frier. There's larger models but they're either pricey or they're going to be weirdly shaped and have no accessories, like grates so that you can have multiple stories of food cooking at once.
    Also, protip: craggy chicken breading is great, so drip a little buttermilk into the seasoned flour or work your gloved fingers into the flour to make little messy doughballs to stick on the chicken.

    Great recipe!!
    Pro Tip: To avoid the powdery air fried wings, I just spray them on both sides with a little cooking oil or flash fry them in 400°F oil for like 20 sec. So they get a thin layer of oil on the outside, yes it does add a little oil to the wings but much less than if you deep fried them the entire time. If you air fry food with zero oil, it definitely comes out more baked then fried.

    I know this is a year late, but if you want to make breading without sticking it in the fridge for an extra 30 minutes, you can make a separate bowl with some beaten eggs in it. You can roll them around in the eggs after you take it out of the brine and then flour it, it helps the flour stick really well to the chicken!
