    I am making picnic chicken! I also noticed the side dish of tortellini salad which I now must make too. As always, I enjoy your show, and Julia you are my favorite!

    When I bake chicken, I like to put a layer of onion slices under them in the pan. They prevent the chicken from burning onto the pan. Plus - Caramelized onions can be garnish, or go into the subsequent broth.

      Continuing. . . . . . The “subsequent broth” part deserves explanation. In my home, most foods are working their ways along a path to be eaten, or into soup, and then eaten. Roasted chicken lends itself to this very well. Eat some, put som into the stockpot. Wonderful broth is the result. With this broth, making soup is just a matter of adding veggies. Piece o’ cake. Beef and pork make wonderful broths too. So do fish and vegetables. Soups!

    I just roasted a tray of drumsticks at 4:30 this morning before it gets too warm, love to have cold chicken to grab and go in the summer. I'll give this recipe try next time.

      I like doing drumsticks in my air fryer and have used the salt/pepper/paprika/thyme/onion powder/garlic powder rub from CC's Cast Iron Baked Chicken subbing smoked paprika and chipotle chile powder for the paprika. 20 minutes boom, done, hot and delicious then, cold and delicious the next day. 😋🍗

    This stuff looks pretty good, but with the kind of heat we have here, I would likely cook the chicken on my Char-Griller BBQ Grill, which acts very much like an oven and would add some Incredibles smoke flavor to it. The others thought that hit me as I watch this, is that this recipe is very similar to the dry rub BBQ chicken drumsticks that you made with Dan, I think. It is a recipe I make rather often, and always turns out well.

    Wish you would do a home equipment corner and talk about your experience with wood countertops, especially around the sink and general maintenance. You could have chosen any material so I wondered why you decided on wood.

    I've always wondered about American chili powder but now I know that it's not just straight up chili but a mix of spices. Here in Norway, chili power is straight up ground chilis, so tablespoons of the stuff would blow your head off.

      I don't know if it's a universal rule, but (in the US at least) chil-e- powder usually refers to a ground chile (pepper) with nothing else whereas chil-i- powder refers to a mixture of ground chiles and other spices.

      I thought I knew the difference between chile powder...ground chilies...and chili powder, the spice blend used to flavour chile con carne. I think I still do, but every once in a while someone will try to confuse me.

    Best Recipe for Kale is.... cut into bite size pieces, drizzle with Avocado Oil, sprinkle on a little garlic salt and give it a slight toss, that way it slides off the plate and into the trash so much easier ... be kind to your Picnic Guests.

    I have several kinds of paprika - Hungarian sweet; Hungarian half-sharp; Smoked Spanish; Sweet California style - I always assume one of the sweet ones unless otherwise directed, but the smoked is so good! Any suggestions here for that spice mix? I don't want to make 5 lbs. of chicken and say yeah, I should have stuck with the sweet...

    Thanks for that comment, RevRon! Please make a youtube about it, so I can see it actually happen! Taking a true internal measurement of the chicken pieces requires the insertion of the probe of the thermometer into the center of the piece, which takes a few seconds, at least, per piece. Me thinks that maybe a better instruction would be to pull a few pieces of breast out after, say, 10 minutes at 500 F, to get an idea of how much roasting has occurred so far. This keeps the oven door closed and the heat inside the oven, instead of inside your kitchen. And, it is the breast meat that you should be most concerned about, because it dries out so suddenly during a "roast", don't you agree? I think that Julia needs to give more emphasis on this point in this youtube. The answer, produce another one! (I love you, Julia!)

      Maybe she doesn't need one If my brown sugar turns to rock, I just spray it with a bit of water stick it in the microwave for a minute or so.

    Hi Julia! Thanks for sharing Sarah's Chicken Recipe with us. But, c'mon, Julia, you really take an internal measurement of each piece of chicken! Did I hear that right? Please ask your Producer and Director to set up a youtube about how to do this! I would very much enjoy watching you or anybody take the measurement of 20 pieces of chicken in an oven at 500 F. I need to study a technique! Thank you!

      Mr Salmon, I take an internal temperature of each piece; it only takes a second if the oven temperature & baking time have been set … pull the tray/rack out check the pieces then take the ones off that are done, then return the rest to finish baking without overcooking the chicken.

      What on earth are you talking about? They had to make do for the pandemic, but the casts of ATK and Cook's Country TV shows have been back in the test kitchen for over a year as is obvious from the current season of ATK airing on PBS now and the soon to be airing new season of CC that will be on PBS in a couple of months probably. I blame the faked drama on “reality” shows - they seem to have affected how people view the actual world around them.

    It really looks tasty but to much work. Julia always says this chicken recipe rocks and I have not tried one of the ATK recipes that wasn't good but there are a million ways to make real good chicken with only a fraction of the work. On top of that making a mess may or may not be fun but messes are not fun to clean up.

      Too much work? It's mixing some seasoning together and rubbing it on chicken. I do something similar with spice rubbed chicken drumsticks in the air fryer (or maybe a toaster oven or grill). I don't do anything in advance. Mix the rub (if I need to - I tend to make a lot and keep it in a jar), dump and rub on chicken, air fry chicken for 20 minutes, done in under 30 minutes. I have one little prep tray to clean the extra dry rub off plus the easy-clean air fryer.

    I do not hate to tell you this but, a lot of us absolutely hate leaving the skin on chicken. Every time I fried or cooked chicken I always skinned it. Everyone who has eaten my chicken dishes has loved them. Maybe the skin falling off is trying to tell you something.

    Again, and again, and again!!!! Darn, another recipe that features salt. ATK and Cooks Country never consider how many of us are on sodium restricted diets due to high blood pressure, heart disease, kidney disease or congestive heart failure. They provide recipes and cookbooks that cater to other special interests but the very large number of us that are struggling to make palatable and company worthy meals for our families are continually left out.
