Lemon blueberry muffins
These Lemon Blueberry Muffins are bursting with fresh blueberries and a zesty lemon flavor, making them the perfect treat for breakfast or a snack. The muffins are moist and fluffy, with a delightful golden-brown top. Easy to make and delicious to eat!
Ingredients:
170g sugar
115g unsalted butter, room temperature
2 eggs, room temperature
1 tsp lemon zest
2 Tbsp lemon juice
1/2 tsp salt
180g all-purpose flour
1 tsp baking powder
145g milk (120 ml)
1 cup of fresh blueberries (about 170g )
1-2 tbsp of flour for coating blueberries
1 tsp vegetable oil
Description:
Preheat your oven to 350°F (180°C) and line a muffin tray with parchment paper
(I'm using a tray with a 9cm top, 5cm height, and 5cm bottom diameter yields about 5 muffins).
In a bowl, sift together the flour, baking powder, and salt. Set aside.
In a small bowl, mix the blueberries with 1 tsp oil and then 1-2 tbsps of flour until the blueberries are coated. Set aside.
In a separate bowl, cream the butter and sugar together until light and fluffy, about 3 to 5 minutes.
Beat in the eggs, lemon juice & zest.
Add milk, then fold in the dry mixture until just combined. once the batter comes together, scrape the sides of the bowl. Fold in the blueberries.
Pour the batter into the prepared muffin tray and bake for 40-45 minutes, until the tops are golden brown, cracked, and a toothpick inserted into the center comes out clean. Let the muffins cool before enjoying!
