Here's some tips if you're gonna make this recipe:
    1. You MUST scoop & freeze the ice cream balls before wrapping it into the mochi. You want it to be rock solid, so I'd recommend freezing it overnight or at least for 5-6 hours.
    2. When microwaving the mochi, make sure it's not too sticky to work with. So you need to keep microwaving it in 15-30 sec intervals until you're able to work with the mochi without it making a sticky mess all over your hands. I also recommend putting some oil on your hands when working with it to help with the sticking.
    3. You can also use the stove if you don't have a microwave.
    4. When wrapping the ice cream in the mochi, you need to work fast, otherwise it'll become a melty sticky mess. You may need to pinch off excess mochi depending on the size of your scoops of ice cream.

For better presentation and less stickiness when you wrap up the ice-cream, try dusting the board lighty with the mochi flour or just straight up dust the ball of mochi. Rice flour is fairly safe to eat (you can bake it to remove potential bad stuff in it if you're scared) and helps a whole lot in general.

When you microwave ice cream, it can briefly reach temperatures where harmful bacteria like salmonella are killed, but this doesn't guarantee complete safety. Also, when you refreeze partially melted ice cream, it can create an environment where bacteria can multiply when it returns to the freezer.
