☝️Mom made English pea salad and I make this often...😊
2 15oz cans sweet peas; drained
1 egg; hard boiled, diced/chopped
4oz cheddar cheese; cubed
Miracle Whip enough to lightly dress
salt & pepper to taste
2-3 TBSP yellow onion; minced
Combine all the ingredients in a bowl and serve chilled
How do the canned peas hold up? I was thinking LeSeur sweet peas, but those are so delicate.
Yes, this is how my mom made it but with red onion.

@@dispeaking1 ☝🏻they hold up very well when it lasts that long...I'd eat that up in no time...I've never used frozen peas because they aren't tender 😊
I learned about this salad in the70's when I lived in Georgia
I had forgotten all about this salad. I love this salad and I will be making this. Great alternative to potato or macaroni salad if you are trying to cut carbs too!
I use shredded cheddar, 2 boiled eggs, 2 ribs of celery, plus bacon, salt pepper, real mayo, a little red wine vinegar,,, really delicious.

I grew up in Texas & loved to go to Luby’s. They had the best dishes ! I liked Furrs too but they were in New Mexico. I always called them red onions but my dad called them purple. Where are you from? I’m guessing Texas Yay! I have lived most of my life in Colorado but the 1st 28 years were in Texas, y’all. I miss the Whataburgers for sure & the good seafood. We lived in Port Arthur next to the coast. The best shrimp comes out of the Gulf of Mexico. Now l’m hungry for gumbo, YUMMY!L!L

Shredded would ahere to the peas and make it soggy. Cubes will keep the salad longer if you don't eat it all right away after preparing. If making and letting it chill like it should after made works better with cubes.
I prefer the cubes to shredded. You get a big biteof the cheese in each spoonful.
I have been making this salad since the mid 80's. Back then it was called "Green Pig Salad." It's one of those salads that when people try it for the first time they almost always ask for the recipe.
Yes, I'm very familiar with Luby's Cafeteria and Furr's too! And pea salad is something I would always get at both!
But I don't recall the salads having bacon in them. And I see no problem adding bacon! I always loved the cubes of cheese and I think one of the cafeterias also added green olives.
Most of the time we make this we used canned peas. Those tiny little tender peas. 😋
And there's nothing like pea salad in the spring and summer. Perfect for picnics or at a BBQ. 😁
We call them red onion here but I don't tolerate them too well. 😕 Especially raw.
My sister just made pea salad last week. We both love and used to get it at the cafeterias all the time. I sure miss them.

I learned from my aunt from Houston many, many years ago to make a pea salad with can peas, mayo, salt, pepper, cubed velveeta cheese and crunched up Fritos!

This is a perfect recipe for those warm summer evenings when turning on the stove just isn’t an option. I would be totally happy with a big bowl of chilled pea salad, some crusty bread and maybe a dry white - I mean, maybe a glass of iced tea. 🥴 Thank you for sharing this!

I love this salad
I make a version of this but I use lettuce and call it layered salad. I use a 9 x 13 pan and layer the lettuce with peas and onion followed by spreading the dressing on top of that. I finish with shredded cheddar cheese and bacon on top. It’s one of my family’s favorite salads. I will definitely give your version a try!

We always add some pickle relish and hard-boiled eggs to ours. My mom always use canned peas to because she didn’t like the texture of the frozen

My mom used to make this and I loved it . Peas are my favorite. I just made it from memory but it just didn't taste the same . Thank you Catherine, it was the BACON !!
It good also with a hard boild egg in it and hint of lemon juice too it really bring oyt the flovor
This us truly a vintage recipe. I remember my mother making something similar almost 60 years ago.
Great recipe Catherine I love the colors. Try adding a diced red pepper it will bring the colors and taste to a higher level. My family loves this recipe any time of the year.

I made this myself today, and it is DELICIOUS! I only made one minor alteration, I added about 1 tablespoon of fresh dill weed, which I feel made it even more delicious. This is a great recipe, thanks for sharing Catherine! I will definitely be adding this to my repertoire. I did add an entire red onion too instead of just 1/3rd of one but other than that I followed your recipe to the letter. DELICIOUS!

The only thing is, I would not use frozen peas. I’m not a fan of raw uncooked peas. I always use canned LaSueur small sweet young green peas, they are firm and mix well into the salad
I agree, and I always refrigerate the cans of peas before opening them. I think the cold peas hold together better when stirred.
We prefer the texture of frozen peas, and my husband hates any canned veggies.
FYI during the freezing process vegetables are blanched/steamed in hot water. Therefore, they are NOT really RAW.😇

We don’t do onions anymore, too hard on the tummy, so I chop carrots and add them now to this salad, so good!

This looks so good. I love pea salad. I add sliced stuffed olives,red apple, cheddar cheese and try to cut everything about the canned very small peas and mayo. Am anxious to try your dressing and bacon. Thanks so much for sharing your recipes.
I love pea salad, normally I've seen it before with ham (which I don't like)but not with bacon. You quote through the recipe very nice & steady.
