in this video, I used 5lbs of pork shoulder. the list below I adjusted spice quantity to (g/kg) so you can make whatever quantity your working with.
Pork Shoulder 80/20%fat
Kosher Salt 18g/kg
Organic Sugar 2g/kg
black pepper 1g/kg
Cardamom .5g/kg
Nutmeg .5g/kg
ice water 70g/kg
Canadian Maple Syrup 70g/kg
*Soy Protein Binder 11g/kg(optional)

Made this today. We had an issue with the collagen casing not wanting to stay twisted into links. I put the coils in my freezer for a half hour and then just twisted and cut one link at a time --often seeing semi frozen sausage poke out of the side opposite the end I was twisting. In the end, I have beautiful looking links but none have casing on about a half inch of one side. I just made kielbasa with natural casing and that was a piece of cake compared to this.
I agree. I've been having the same issue with these new collagen casings that I have. For some reason they untwist and almost feel like rubber. And when frying them it's like half the casings disappear. I will look into which casings I used originally. Thanks for your feedback

How many pounds is your pork shoulder sir????
I believe that pork shoulder was 12 lbs, but I only used 5 lbs for this video. In the description, I listed the ingredients I used in g/kg this way if you wanted to make more or less just need to adjust the quantity. Hope this answers your question
