    INGREDIENTS
    2 tbs oil
    2 garlic cloves, peeled
    1 small onion, roughly chopped
    1/2 red capsicum, roughly chopped
    1 carrot, grated
    1 zucchini, grated
    500g beef mince
    2 x 700g bottles of tomato passata
    1 tbs basil
    1 tbs oregano
    1 tbs parsley
    2 bay leaves
    1-2 tbs butter
    1 tbs salt
    METHOD
    1. Add onion, garlic & capsicum to a food processor/small blender and blitz
    2. Heat oil in large pot on low-medium heat
    3. Add onion, garlic & capsicum and cook for 2 minutes
    4. Add beef mince and turn heat up. Break up mince and cook, stirring often until browned
    5. Add carrot & zucchini and lower heat back to medium. Cook for about 5 minutes or until veggies soften
    6. Add passata, herbs, butter & salt
    7. Bring to the boil and then put on low heat to simmer for 1 hour
    9. Cook pasta of your choice in salted boiling water & then serve with the sauce
