Bun Cha versus Pho, is it the seasonings that are used and some of the vegetables. that differentiate the two dishes?
They are different dishes and cooked differently.

There are over 200.000 Vietnamese living, working and studying in Taiwan so you can get Bun Cha anywhere there. Make your home base in Taiwan, it's more affordable than the US, cheap and easy to travel anywhere around Asia to make videos on all the cities in Asia especially China and India....every couple months return to North America to make more videos.
It was tough for me to find Bun Cha in Taipei.
AK is loving it in Asia. I bet he wants to go back to Vietnam soon. There's a Russian YTer living in Dalat right now with a couple of Canadians. It's not as hot there.
