Yep, add until you're happy with the consistency, about a Tablespoon at a time :)

Tomato paste is made from tomatoes that have been heavily cooked down to reduce the moisture, so it's already cooked and safe to eat! And even if it wasn't, it goes on top of pizza dough and bakes with the pizza in the oven :)

I think the flavor and texture works best with pizza, where the sauce isn't the star of the dish, but it wouldn't be bad with pasta.
I think pasta sauce usually has pieces of real tomato, which you won't get from tomato paste, but this recipe would certainly work in a pinch. You are more than welcome to try it!

Stewed tomatoes are a lot more watery than tomato paste, so it's not going to be a 1:1 substitution, but you're welcome to experiment!

Crushed tomatoes. Same price as decent paste. no need to add water. also tastes more like pizza sauce considering YOU DO NOT COOK pizza sauce paste is very much cooked (yes i know whats canned is brought to very high temps during the process of canning) Also for a more traditional pizza sauce. its salt oregano and sugar all to taste. once you add Tyme rosemary etc you start leaning towards pasta sauce.
I've tried crushed tomatoes, but all that liquid tends to make my pizza soggy, so this is what I do!
I like my pizza sauce the way I make it; you can continue making your pizza sauce the way you like it :)
I couldn't ever use this recipe.. tomato paste is used to thicken a sauce , it's not to be used exclusively.. That's like using just the hamburger helper and no ground beef.. It's just not right.. If you're opening cans already , why not open a can of good tomatoes season it the same exact way and have a really good sauce? Possibly use a bit of the paste to give body to the sauce and enhance the flavor.. You still can store the excess and use next time.. Just my two cents..
I like to use tomato paste for my pizza sauce because canned tomatoes have proved too watery on my homemade thin crust pizza, even if I strain them. And I don't like huge chunks of tomato in my sauce (personal preference), so I have to process or chop them, which results in a stack of dishes.
By adding water and spices to tomato paste, I get a nice tomato sauce with an easily customizable thickness at the small cost of dirtying one bowl and one spoon.
Everyone has different tastes, and not everyone is going to like every recipe. And that's okay :)

If you have pasta water on hand, then yes, use it! But plain water will still do the job :)
