Recipe
5min prep, 25min total
Serves 2
Tomato stock
3 cups boiling water
1 cup tomato passata
1 tbsp tomato paste
1 tsp salt
Everything else:
3 tbsp olive oil
2 cloves of garlic, finely chopped
2 tsp crushed chilli flakes, or to taste
200g thin spaghetti
Parmesan
Parsley to garnish
Directions:
• Combine the tomato stock ingredients and set aside in a bot or a bowl
• Place a large frypan over medium heat and add the oil, garlic and chilli. Saute briefly being careful to not burn the chilli. Pour in about ½ cup of stock to stop the cooking and reduce slightly.
• Then add the spaghetti and another ½ cup of stock. Cook slowly for around 15min, gradually adding the stock until it is all absorbed and reduced in to the pasta.
• At the end leave the pasta still and increase the heat briefly to burn the base slightly and scrape it off the pan and serve with parsley and parmesan.
Do an episode in the parking lot of the local fire department, get some firefighters to show some of the causes of fires in the bush and then cook them a killer meal as thanks

Nice to get inspo for proper meals, we used to just have 2 min noodles but you’ve made us get more creative and it’s made cooking time fun! I will say though, we burn things too often when we camp though , might need a certain book to give us some meal inspo with instructions 😌🤪

my understanding of the recipe is that traditionally you toast the pasta before emersing - which helps it to soak up the sauce and extend the cooking time - and then just like a complex risotto you should probably layer more "cycles" of liquid to create more caramelisation and more burn. Doing this way would entich the flavour and create layers - but difficult to do on a windy beach in the middle of nowhere cooking off a gas bottle. I guess this is a good camping compromise for a 1-pan wonder.
I cooked this and yes I had to add multiple lots of water and Passata to fully cook the spaghetti (I may of used too much pasta) it was like cooking a risotto
Made this last night the family, got thumbs up all round. It'll be a keeper especially for when camping and running out of fresh ingredients.

I cooked your simple stew recipe on the stove in the house on Sunday. I had all intentions of a camp oven but we had rain Saturday night all day Sunday, Monday and Tuesday so far. And guess what Harry, it tasted bloody marvellous and I didn’t burn anything. 😢😮We did need the rain.

Recently started watching and have fallen in love with the channel and your video format have watched the delica travels very funny. This dish is one of your more simple dishes i reckon it’d be perfect for one of those nights when it’s raining while camping
Hot tip. Before cooking garlic, remove the germ....the part that turns into the sprout. It adds bitterness. If it's already green, dont worry about it. Slice it in half and use the knife end to pry it out.
You can really feel the burn-ing passion for cooking without a fire must be why this channel is known as induction to seduction.

Having a Cub and doing most of our cooking on gas it was good to see a gas segment. I’m keen to try this “BURN” method.
I've made All' Assassaina quite a bit for the fam. I'd say under the circumstances you did a damn good job. You need a bigger pan, once the garlic and chili is fragrant add about 1/2 cup of the stock and the pasta. Let it go until it's almost dry and pasta is thoroughly browned. At that point add ladle in some of the stock a bit at a time and yes cook it the rest of the way as you would a Risotto a ladle of stock at a time until it's done. I agree it's an amazing dish and trust me, if you want a meaty sauce make sure it's VERY well blended or it will be a disaster.

Great video with gas gives a great insight as how to cook on something else on a fire ban day and such a simple recipe ,actually cooked a meal similar at home on gas got distracted and did burn a reasonable amount but still tasted great .

Time to get an awesome gas cooker for emergencies, I use camp chef 14 inch double burner. 2 x 30,000 btu’s, very excellent. Wind can be an issue, thinking your fire reflector would be handy.
Potential idea - Double garlic, add gochujang during cook.

Clickbait thumbnails are bad, a good thumbnail gets a viewer to click and is delivered what is promised, hence not clickbait. A great thumbnail for this would have been WHAT!!! No fire 😱. Great video Harry. Better put in the word "burn" and comment on the recipe, does look good and must give it a go. I will do it it with a ragu I think. BTW what is the brand of pasta you used? A CZcamsr Vincenzo's plate has a video on choosing a good pasta.

I watched this at work . Then I picked up some mutti on the way home, made some tomato stock cut some Fresh garlic with my fire chef cleaver . Oiled my not so stainless frying pan reduced said stock with spaghetti . Then found out how right you where it doesn’t feel right over reducing it till it’s “BURNT”but the 9 year old loved it and yes I didn’t forget the basil “parsley”

Burn (t) caramelised tomatoe is the only way to eat pasta. I did it by accident once, and it tasted delicious. Of course, I didn't know it was a thing. Nice pan! I want to buy an Oz braii knife for camping. Sick of horrible knives but can not afford the set. Which one do you suggest, please?

I had to cook your boneless buttermilk chicken in a gas oven just last night because we had crazy wind gusts & rain here & I didn’t feel like the stuff around.
Definitely not as good because no smokey crispy skin but still delicious & moist & the gravy & roast veggies made up for it… well almost 🤣
Fire is best, but gas will do if you don’t have a choice; better than breaking a fire ban or risking it when you know you shouldn’t. Cheers
