One of my main missions when I visited Addis Ababa, Ethiopia, was to learn about how to cook what is for sure one of the most special of all Ethiopian foods: doro wat (ዶሮ ወጥ). Of course, they do serve it at restaurants in Addis Ababa, but there’s nothing like seeing the entire process of a dish, especially a stew like doro wat from start to finish, beginning with a chicken, and finishing by eating. It’s a very complicated dish to make, and it takes utmost care and time. I want to say a huge thank you to Belaneh and his family for graciously inviting us to their home and for cooking the most amazing doro wat - or even Ethiopian food meal - ever.
What is doro wat (ዶሮ ወጥ)? Doro means chicken and wat means stew - so it’s an Ethiopian chicken stew. It’s a very special dish to eat in Ethiopia, not an everyday food because it takes so much time to prepare properly. As many Ethiopians told me, it’s a dish they often eat when family comes together, and during special holidays and religious days.
I would go as far as saying Doro Wat is one of the best dishes in the world. The complexity yet harmony of spices, the richness, the contrast of taste when paired with injera - your taste buds will be blown off your tongue! Thank you to Bela and his incredible family, they took no shortcuts on making doro wat, and beyond the delicious food, it was so extremely special to get to know them and hang out with them.
We first went to the fresh wet market in Addis Ababa to buy a chicken, the live chicken. We then gathered a few more ingredients, including the chopped red onions, which is the main component of doro wat sauce, and went back to Bela’s home. Butchering a chicken in Ethiopian, due to some of the Ethiopian Orthodox traditions, needs to be butchered in a certain way, and washed and cleaned many times. It was by far the most cleansed chicken I’ve ever seen or eaten. The onions simmered for a few hours before we started adding in the berbere blend spice and finally the chicken went in to brew with the amazing spices.
To eat Ethiopian food, you first typically build a plate or platter of injera, and then scoop the food onto the injera. We all shared a platter and scooped on the beautiful doro wat. It was unbelievably delicious, so rich and packed with spice.
Again, thank you to Bela and his wife (and baby) for cooking us one of the most special meals you can eat in Ethiopia.

The Ethiopian guy is so polite! For those who don’t speak Amharic, at 10:11 he was telling his wife to put the chilli spice slowly so it doesn’t end up in Mark’s eyes. Bless!

Some of the most wonderful people are indeed from Ethiopia. I have to agree! I am American and one of my very dear friends is from Ethiopia and I absolutely love her!!! Her mom is visiting and made Dora Wat and so SO good! More so, she treated me like I was her own daughter. Much love to my friend and her family indeed! 🙏❤
@@firebug1892 It saddens me to hear you say this about America... I am from America.. but as an American I can understand why you might think that. Let me say that not all are rude people. I LOVE people from everywhere and enjoy learning about different cultures. My grandmother was from Italy ( I miss her so much) and because of her I was taught to love others.
Unfortunately, anywhere one goes there are good and bad people.
But please, if you only go by what is seen on television do not go by that alone because television is not always honest.

In Ethiopia, hosting a guest is an honor and that s/he is welcomed as such. The locals, when receiving a guest like Mark, would even call him/her "Ti'Kur En'Gida/Black Guest," a rare visitor (usually from far)--denoting the importance of offering the utmost hospitality that one could afford. Belay and his wife were generous enough while Mark, too, was extremely humble, pleasantly grateful. Thank you for traveling and sharing people's wonderful cultures across the world.
AlHamdulillah, Mark's channel is one of the best things online. There are so many places I want to visit that he's allowed me to experience, and so many places that his channel has brought into my awareness. I'm so grateful for these sort of videos because it is so positive and shows the different energies of each place. You might also be interested to know that Mark actually grew up in Nairobi Kenya.
I always wanted to travel like this, but Mark has kicked that dream into high gear for me. I have some great friends who want to bring me to places like Ethiopia and Pakistan. Sadly everything is on hold right now. But my friend does often tells me about his fathers Doro Wat, I hope to try it after pandemic is over InshaAllah.
@Antonio Edwards it is doro wat - I didnt notice him saying dodo, but I imagine he was rolling the R, sometimes a rolled R sounds like a D
@Antonio Edwards either way, just google it and see which spelling produces results

Jealousy at its best
The one thing that sets him apart from other food bloggers on youtube is the fact that he gets involved with his host in a way that is respectful of their culture. No bossy gossip talk and insulting whatsoever . Always happy to see your videos, and I feel like I am present with you there. Awesome keep going.
i Agree
I agree you are so sincere and it shows.
Which food blogger does bossy gossip talk and is insulting ? Many i've seen (The Food Ranger, Striclty Dumpling etc.) are quite respectful and love the food they taste and the people that make it.
I've never seen any rude food bloggers. But TV chefs like Anthony Bourdain and other personalities on the Food Network have been rude.
Not to forget the respect for the food and his infectious smile after testing.

they look like amazing people, so kind and so welcoming. we need more of that in this world.
We Ethiopians have the outmost respect for our guests. There is a saying that goes “engida nigus new” meaning “guest is king”. Not too long ago when a guest(even if we don’t know the person) come to our house we bath their legs(mostly children’s job to do), we leave our bed to a guest and sleep on the floor or couch. I’m not even exaggerating. We are always welcoming people. That’s why you see a great hospitality from the tour guy.

Haitian Beautee I agree. I’m Guyanaese and we clean our chicken with these techniques but not the air and yeast. Lots of limes, lemons and salt.
In trinidad, we wash our chicken with lemons, always wondered where that came from
Woooooow thanks for that bit of info. That really is special that a method has remained intact....because it must work!
Most Haitians trace their origins in Western Africa tho ... thats miiiles apart from Ethiopia .. but i guess this type of cooking spread in this part of Africa too ?!
@@gatopsaro4262 our origins is actually North East Africa which is Israel. West Africa became populated from various migrations from North Eastern Africa. That's why we Haitians and other Caribbean people clean all of our meats like this minus the yeast. Growing up my mom never allowed us to eat fat nor blood either. Those Ethiopian people in this video are our people.
I can't take this anymore. On my way to an Ethiopian restaurant.

THAT'S WHAT I SAID AFTER WATCHING THESE VIDEOS LAST NIGHT...
MUST GO TO "BLUE NILE" ETHIOPIAN RESTAURANT...

I think you should find a Ethiopian friend and eat at their house cause idk the food, the vibe, the experience is better than going to a Ethiopian restaurant locally because I think its more intimate and nothing is rushed. If you need to try it and dont have the time to find a ethiopian friend, I guess you should go to a local restaurant. I would suggest eat with some random ethiopian and do the Anthony Bourdain with them and experience be nicer cause you have someone who knows everything about the food tell you everything about it and the culture as you eat, you get little bit of the house experience in the restaurant.
Sameee
In school i did a project about food of different cultures and we visited an ethiopian family and we cooked this dish with them, it was insanely good. That Ethiopian guy is so like you mark ....this gentleman is so sweet, humble , so down to Earth...I loved watching his beautiful family while cooking yummy food 😍❤️❤️❤️🙌🙌🙌
You're one of the rare CZcamsrs who respect a culture for what it is instead of being condescending or forcing an arrogant lens on them, this is why I'm subscribed to you. Your smile is so contagious too dear lord
This is my same reason...lol
I wouldn’t call this rare. Actually I can’t recall anyone making a video in another country or culture and being condescending or less than nice
We easterns certainly respect all cultures while westerners feel entitled and impose their thought process on each & everything.
@@architsharma6524 yeah man dont even act like Indians arent racist. Ive heard about the way how mainland citizen treat southern and eastern citizens.
Reminds me of Tony Bourdain 😢
Before eating the meal the young Ethiopian man, made the sign of the cross over the meal and said In the name of the Father and of the son and the Holy spirit and said may the food we are about to eat be blessed by you FATHER.........so heart warming👌 💋💋💚💛💖💚💛💖💚💛💖
Absolutely!

The family hosting Mark is so hospitable and friendly, and a good looking family too. I bet they could get so many visitors / tourists to pay for that experience.

Very honorable.
Thats true! I have seen Belay with other video of Mark, he is very simple guy to communicate and be with.
More I see of Africa and Africans my respect for them and their culture increases. Such nice warm and simple people. May not have the best infrastructures and comforts of the life.....but who cares when people have such good hearts. Thanks a ton Mark for showing us the real Africa.
Specially Ethiopia
Yes, it's very nice to see people of African decent being shown in such a positive manner. It's educational for the world. We see so much negativity on the tele in regards to people of African decent, although there's positive and negative examples in every race. So often only the negative is focused upon though. So thank you Mark for sharing the positives.
Africa is a continent. Why are are trying to categorise a continent? Make no sense.
I absolutely love how wholesome these videos are. His smile is so genuine and he and everyone in his videos are always so polite and respectful to each other.
The guy with mark is so pure and polite. The hospitality is very awesome!, same trait we have Filipinos, add it with a smile as well. Bless you brother! sending love from PH!

I was in Sudan...Ed Damazin for two years during 2009- 2011....worked for the UN Peacekeeping Mission....believe me..the Ethiopians were the Pantry/Canteen masters...we enjoyed the food made by them. I even don't forget their names....Mahmoud, Ayanthu, Mimi, Alisha....such a nice persons, very well behaved. I thank them for that I enjoyed the food prepared by them for two years. Their smile used to come from their hearts. And ..........they are Excellent dancers too. I visited Adis many times and one village ..I forgot the name ...through a village in the border of Sudan named Geissan. Thank you @ Mark for refreshing my memories...

Such a kind and wonderful hospitality, the intense hard work in preparing the meal to the guest makes my heart really warm.
10:11 he told his wife to be more gentle with the spicy berbere so it doesnt splash into Mark's eyes. They are so sweet ❤️

I know right, his host was very kind. If only Mark knew the kind things he was saying to him. But i'm sure he felt it through his smile.
Nice observation. Even he stretched his hand to protect it.
