- Dear friend! Welcome to my unspectacular, yet satisfying life in Oslo. This week: Mr. J. and I cook a meal together, an update on project bicycle basket for Mochi (I want to train her to eventually sit in the bicycle basket!)
Quality alone time in a donut coffee shop. A walk with Mochi in the Kampen district of Oslo.

PEANUT BUTTER CHICKEN CASSEROLE with RICE
(This recipe is very forgiving, so you can experiment with the amount of spices ect. And if you're a vegetarian, you can replace the chicken with potatoes / sweet potatoes. It's just as yummy!)
1 red onion
1 bell pepper
2 cloves of garlic finely chopped
1 table spoon of finely chopped ginger
1 table spoon of tomato paste
1 tea spoon cumin
1/2 tea spoon cinnamon
1/2 tea spoon chilli powder
1 can of coconut milk
1 can of chopped tomatoes
2 decilitres chicken stock
5 table spoons of peanut butter
1 or 2 chicken breasts (you decide the amount)
Lime (optional)
Chopped peanuts for crunch (optional)
Fry the red onion and the bell pepper for a few minutes
Add garlic, ginger, tomato paste and the spices. Let it sizzle for a few minutes while stirring
Add coconut milk, chopped tomatoes, chicken stock + the peanut butter. Bring to a boil while stirring. Reduce the heat and prepare the chicken. Fry the pieces until golden. Add to the pot.
Finished!
Serve with rice

I enjoy your choice in music for your videos, it’s perfect! And you know when to insert it so well! It’s soothing to hear it, and also to just hear the daily sounds, for example, cooking, or Mochi biting a piece of wood, on and off goes the music and sounds. There is even a musical pattern with the sounds, lol. Magic in the ordinary!
I really appreciate your comment about the music, it made me smile! I actually spend some time deciding where and how to use the music. For this video, I was considering putting music on the cooking scene because I was afraid it would be too boring for the viewer without music, but then I remembered that I love the sound of onions frying, the sound of chopping, so I left it like that. Daily sounds that we all know can be so beautiful, and we always take it for granted.

What a cute dog! Funny you put a Bear picture up (looks good) as I live 2 blocks away from woods and was walking my dog @ night few weeks ago and saw Mr Bear in someone's backyard. They usually like to come out when it is garbage night because they smell the food. I was surprised that my dog (Mini Aussie) did not notice the bear! Luckily, he didn't bother with us as he was more interested in the garbage cans than us!!! Greetings from NJ, USA!

Yes, Edvard Munch painted animals, but mostly humans with all their inner turmoil (Like the famous scream). Actually the place where the scream character the painting is screaming is not far from my house😂

I like the Oslo logo. I did a search and learned that it is inspired by the city's coat of arms. It represents St. Hallvard. I have also learned that Oslo means "the hill of the gods" in the Old Norse language and that before it was renamed it was called Kristiania after the Danish king who founded it.
I love your love for finding out stuff! I'm like that too. Another fun fact for you that you may not know: Written Norwegian and Danish is very similar because the Danish king that you mention was among many Danish kings who ruled (occupied) Norway for over 400 years. Before that, people spoke norse language. Another fun fact: Although the two languages are very similar in text, they sound extremely different when spoken 😋

Yes, Mochi's pure delight after having found that log was just so sweet, I really had no other choice than to pause the walk to play. When she is in playmode nothing else matters 🥰
And you are right, she is very attentive. I haven't had any other dogs, so maybe all dogs are like that, but yesterday it seemed like she was turning around to check on me more than usual when I was very frustrated about something at work. Maybe she could feel something was different even if I didn't say anything or behaved differently?
I am very curious to see how she will react when I actually put her in the basket. I think I will need some high value treats to keep her happy 😁
In my experience, all of our dogs have been keen studies of our every move and they honestly do seem to be able to read our minds - often before we have actually fully formed a thought in our own heads. They can be uncanny that way. They pick up on and reflect our moods, too.
We are, after-all, their sole focus in life. Unless they are sleeping. They watch and learn so much simply by being 100% present in every moment.
Mochi, being an only dog and being such an integral part of your life, is perhaps even more attentive. She is constantly looking to you for direction and guidance and she really seems to anticipate and question a lot. I absolutely love how clearly she communicates with you, through her subtle nose pointing, gentle paw-touching and head-cocking. She also speaks a lot with her eyes.
She is absolutely taking everything in, in great detail.
