You use oxygen to metabolize fuel, oxygen is an oxydizer and using an oxydizer to burn/metabolize fuel is not the same as oxidation a process that destroys things and causes things like rust on metal. We need oxygen to survive but it does damage cells. Still far different than ingesting heat ozydized oil.

Dr. Layne please please please do a what the fitness responding to Max Lugavere’s podcast Genius Life episode 404 “Why seed oils are destroying our health.” I actually really respect Max and believe he has the best intentions in mind but I think he gives non-evidence based fear mongers an outlet to speak far too often. The physician (Cate Shanahan) he interviews literally said that eating McDonald’s French fries is as bad as smoking cigarettes and then spent the next half an hour building a narrative demonizing seed oils. I think it would make suuuuuch great content for a what the fitness. At 30:50 Dr. Shanahan says “vegetable oils kill our body’s ability to control energy because they deplete our body of antioxidants.” Then at 55:50 Max asks her if there are any risks to saturated fats and she spends the next 5 minutes avoiding the question. This really feels like a job for Layne Norton.

Why are these influencers never Dietitians or Nutritionists? Or at least a main focus of nutrition or food chemistry or something to that effect? Paul is a shrink. Gundry is a heart surgeon. Baker is a surgeon. Dr. Oz is a heart surgeon. We have surgeons, psych people, chiropractors, etc. They all "go against the grain" and claim to have the secret to success. Shouldn't there be some level of irresponsibility on their parts that should hurt their expertise? Been following Layne for 5 years now and it seems like those people haven't lost steam at all. Keep up the good fight, Layne. Maybe one day the shills will finally stop benefiting from snake oil.

I have a question, will eating regularly foods that are fried in hydrogenated and partially hydrogenated oils, reheated over and over but being in energy balance and working out regularly and fulfilling my nutritional requirements adequately, would those fried foods still affect my heart health and markers if I'm in energy balance but they might possibly contain trans fats as a matter of fact? Also do trans fat really affect heart healthy if we're lean, healthy and stay in energy balance?

McDonald's switched from using beef tallow to vegetable oil, specifically a blend of canola, corn, and soybean oils, for cooking their fries in 1990.

And I had discussions like that before where, out of nowhere, the other person argued that I said that fast food is healthy etc - which I never even said a single word about, because we were discussing energy balance and calories. I would like to know if excessive protein is bad for our kidneys?
He already made a video about that, TLDR no it isn't provided you don't already have kidney disease.
There hasnt really been a long term study pointing to it being bad, the longest was 6 months and kidneys were fine. They also look at athletes kidney health over all since they are on high protein diets and they seem to be fine as well. In rat studies high protein does cause kidney damage but that doesnt always correlate. Over all it seems fine to be on high protein, if you already have a pre existing kidney issues thats when it becomes a problem and a low protein diet is advised.
"Excess" of anything is prbly not good....excess water...excess iron...excess walnuts.
Just eat the appropriate normal amounts of things.
My kidneys are damage from bacteria, but i eat Up to 150gram of Protein/day, walk 1 to 2 hours daily, make Bodybuilding and have perfect bloodwork for the damage given. Medication for kidney is Ramipril and forxiga. The right food and moving is the the biggest influence of health and wellbeing, without you will not get healthy, even with the best doctors.

The epi studies that compare the lowest to highest intakes are terrible for these public health messages. Epi nutrition and other lifestyle scientists need to start comparing each group.
Are oven baked french fries as bad? Is it the deep frying that causes the unhealthiness? Acrylamide is still there, right?
The toxic byproducts of deep frying are predominantly from frying in the same oil over and over again- day after day. If restaurants started off with fresh oil for each batch of fries, they'd be exponentially healthier (even just replacing the oil on a daily basis would help). Obviously this isn't economically feasible. It isn't really economically feasible at home either, but if you can afford to cook a meal's worth of fries and then toss all that oil, that's going to be your healthiest french fry. Or just saute your potatoes or pan roast them in olive oil.
It's just common sense. We're not meant to eat spoiled food. Heat spoils oil.

Potatoes in them self is not that bad is it? I make french fries in an airfryer, no oil at all. Would have guessed it is the oil that is the problem?
I'd say it is the calories (added by the oil) that makes them bad, but if you're taking them into account and you're in a negative or neutral energy balance, getting enough fiber and protein from the rest of your diet, there shouldn't be much cause for worry.
I do not agree with "Scruffed". Potatoes are neutral source of food at best. so it comes down to how that are prepared and with what. if you are going to fry them, do so in tallow. if you are making mash potatoes, use butter, saturated animal fats with low linoleic acid. "calories" is meaningless if you are metabolically healthy and eat a evoltionary consistent diet that your body understands.

I worked in product development for Frito Lay. The food scientists and food engineers often discussed the elephant in the room: Acrylamide risks to health. The comparison to smoking is ludicrous. But to downplay the risks of reused seed oils, fried potatoes and grilled foods is irresponsible. No amount of yelling changes your message.
His message doesn't defend anything you listed. He's only pointing out that cigarette smoking has a plethora of data to explain how bad it is, AND it's significantly worse for you than eating any of those things (unless you want to pretend someone would eat pounds and pounds and pounds daily for a long period of time). He isn't saying they're particularly good for you, or that people should even eat them. Layne highlights basically people like you at 4:18

@@Melesniannon I only have anecdotal evidence through the lens of my own experience. I know of people who lived to be in their 80s and even 90s who smoked but I don't know a single person who's obese eating French fries who made it to 65. That's all I got but it's a start.

Btw looks like over 11,000 peer reviewed studies have been retracted due to fraudulent information. It's all bs. You can only trust common sense.
