Ok, so then why has america gone from lean (70s and before) to obese, at the same time sugar, refined carbs and seed oils were starting to appear in almost all foods?
Because average daily caloric intake is up by almost 1000 calories per day on average. That. Fucking. Simple
Sometimes the answer is how not why. The why is that we're over consuming, the how is that ultra processed foods that have been ENGINEERED to be as palatable as possible for as long as possible contain a lot of calorically dense ingredients. Increased consumption combined with an increase in base calories of the food consumed equals we all got fat in the rapidly industrialising West.

the more you learn, the more complicated things are, and then the more you learn beyond that, things get simple again
same shit in my case. For starters I was more CICO flexible-diet guy. Then I came up on low-carbish approach, started being interested in it distantly. I thought that if you want to go insane, start getting know with nutrition subject.
Subsequently I got really hard into a community that said even fruits and vegetables were poisonous. You know, fructose and all that shit. Then, more temperate attitude like Robert Lustig and got into him also greatly.

A deep dive video on saturated fat would be really beneficial IMO. Breaking down some of the epidemiology, replacement studies with refined/whole carbs etc and also looking at effects of differing sources (meat, dairy, butter, tropical oils etc) 👍
Search ‘David Diamond saturated fats.’ He has several videos exposing the fraud designed to demonize saturated fats.
I suggest that the fats of pastured animals is better than GMO corn fed animals.

I can tell you that the vast majority of fried foods you're getting from a restaurant come from old dark oil that's been reheated many times

Yep, another reason I don't like eating out. And I know this is not "nice" but I especially avoid the mom-and-pop restaurants.
But exactly why is this reused, reheated oil bad? Because it's all poly unsaturated oil. The heating (and reheating) causes the oil to go rancid, leading to ROS for those consume it. And ROS leads to chronic inflammation, and a cascade of downstream effects, including auto-immune diseases.
Great video. I'm convinced hyperpalatable foods with high energy density is the main problem with modern diets.
Sugar, oils and processed carbohydrates are all partly to blame because they have such high energy density and it's hard to control adequate ingestion.

Yup. It is very easy to over eat foods that are high in sugar/simple carbs, because they are so calorically dense and low volume. It’s okay to eat a little bit of simple carbs, but eat it with fresh vegetables and lean protein so you get full!
Sugar and carbs don’t have high energy density. They are 4 calories per gram. Fat is 9. What you mean to say is that the formulation of foods are hyper palatable these days, which causes overconsumption. You can’t say that carbs are energy dense. Even in instances where they have zero fiber, they’re not energy dense unless they’re packaged with fat.

You can say that some carbs are easy to over consume, which usually isn’t even true unless they’re packaged with fat. Go ahead and see how much corn or bowls of white rice you can eat without any fat. Stop talking nonsense by saying they’re calorically dense.

1. We don’t know the long term, even generational effects of lots of modern foods but we do know they can have effects (Pottenger 1942). Virtually all studies are very short term, certainly not generational. What’s your take on this line of thinking?

Exactly. All these followers of Scientism think we know everything from short term studies.
It's absolutely insane you are referencing Pottenger's experiments. I would argue his experiment didn't even have a real takeaway for modern food, but that's beside the bigger point that his experiment was completely debunked.
The food he gave the cats lacked the essential amino acids cats require. The negative health effects were caused solely by malnutrition. Cats can eat cooked meats diets with those amino acids and not experience any health defects.
It's studies like these that assume correlation is causation that causes misunderstanding with seed oils and many things like that. Just because 2 things correlate doesn't mean we should EVER assume 1 causes the other without proper research.
@@Klein-sb1th the point of referencing Pottenger isn’t that his experiment has some special insight, it’s to point out that we don’t know everything and sometimes things can have very long term effects that we won’t be aware of unless we have equally long term data. It’s a caution against the pretense of knowledge.

Pottenger's experiments had literally nothing to do with the long-term effects of a modern diet. It is literally a guy that malnourished cats because he lacked the knowledge of basic dietary needs.

Layne, the RCT methodology is flawed for the following reasons…
SHORT term RCTs by definition cannot provide evidence for LONG term chronic disease in which oxidative stress has built up with age over DECADES, because:
Firstly, it’s NOT the *consumption* of seed oils that counts, it’s their *increased concentration in plasma membranes* that’s crucial, the build up of which is a chronic process.
Secondly, seed oils don’t CAUSE oxidative stress, they merely increase one’s liability to oxidative stress when it spikes (and eventually it will).
Thus, it takes BOTH the buildup of linoleic acid in plasma membranes and an oxidative stress moment to create an inflammatory effect.
A better analogy from Chris Masterjohn is with banks taking on toxic debt: it’s fine for years until a black swan economic moment activates the toxic nature of that debt…
…your RCTs simply failed to run long enough to: (a) capture black swan oxidative stress events in humans and (b) allow sufficient time for PUFAs to build up sufficiently to make a difference plasma membranes.
A third problem is it’s not possible to have a control group if the entire population is already saturated with seed oils.
To my knowledge no RCT has acknowledged or even attempted to address these three key problems.
i found myself looking for chocolate covered pretzels that didn’t use seed oils, because seed oils cause inflammation and I realized how ridiculous that was.

I watch content from both, and I do feel like there's a lot of difference in the takeaway I walk out with, and there's probably a really important total conversation that you should all have in one video, together, with data, and conclusions and agreements/disagreements.
It does seem like everyone is kind of on the same page, but the packaging makes it seem like everyone is going in different directions.

When I eat seed oils, my gut inflammation kicks into full gear and I’m miserable. When I cook things in beef tallow, butter, EVOO, I feel amazing. Been living with Crohn’s for about a decade now and eliminating carbs and seed oils from my diet has helped me stop taking weekly injections. Haven’t felt this good in years and I finally have my life back just by changing my diet. In the process I’ve lost a lot of weight too. Doctor Robert Lustig, right here on CZcams, has a lot of insightful information about how unsaturated fats chemically change when under extreme heat and pressure alone, which is what every seed oil needs to go through to become “edible”. He breaks down the exact science of why it occurs and how it negatively affects your body. Labeling natural saturated fats as unhealthy, the fat that oxidizes the slowest by far, has been one of the biggest metabolic mistakes doctors around the world have pushed.
This is exactly why I’m watching this video. I recently started eating seed oils again and I noticed I feel so heavy and gross after. I wonder why it affects some people like that if the studies don’t show it having a negative effect. I didn’t know the food had seed oils in it but after feeling crappy I asked and it turns out they cook with seed oils.
Is there a chance that you were eating less calories when you swapped seed oils and carbs for saturated fat and therefore you lowered inflammation because losing fat does that?
@@JoshYarlett I did not alter how much I was eating, just what I was eating. It’s incredible how bad I feel after eating things cooked in seed oils. It’s like going from 0 to 100. My stomach begins to cramp the next day, my heartburn instantly comes back, and my 💩 is loose and/or diarrhea - which is a clear sign of intestinal inflammation

I’m a carnivore and I am no fan of plants or seed oils for that matter, but I liked this video. Ive never found the arguments against seed oils very compelling, but I stay away from them anyway because they were part of the problem back in my overweight days. I eat the way I eat because I can adhere to it and thus keep the weight off and progress toward my fitness goals.

That's very good, but remember when someone else prepares any food that you eat outside the home, it's likely full of seed oils.

I appreciate the break down with emphasis on randomized clinical control trials. I’m curious how the comparison looks with omega 3 rich cooking oils like Avocado or macadamia oil vs PUFA or Saturated fats. The latter 2 are not the only cooking oil options.

Yeah I'm disappointed that he didn't go over the full spectrum of oils. The data is clear that a magnetic 3, 7, and 9 do benefit health far beyond other oils. However, even too much omega-3 can begin to be detrimental.
Nutrition Made Simple has a good video where he goes into more detail on the overall evidence. But overall, great video and a good analogy with the mutual fund.

I inject grapeseed oil into my delts every other day for my TRT and massage my nipples with sunflower oil and im thriving 😂
When I cut out seed oils and went on a high saturated fat keto diet, my C-reactive protein level tripled and LDL shot through the roof. Fortunately I was only on it for a short time bc it's a miserable way to eat and not sustainable. Additionally, healthy cell membranes and mitochondrial function absolutely require unoxidized Linoleic Acid. Too much saturated fat incorporated into membranes make them stiff. You'll never hear me advocating against unoxidized PUFAs or MUFAs.
How long were you on keto? if you were never fat adapted, your body might have been going through metabolic hell trying to adapt and re adapt from consuming low carbs

Similar experience here. I’m a lean, active 40y female and after a calorie controlled period of “ketovore”, my LDL DOUBLED and my Trigs increased. I changed my tracker settings back to “balanced” and in 7 days, my TC dropped 112 points. Fasting BG exactly the same and far more stable during the day.
I shall continue with my 2 second Pam spray in my non-stick pan.

But speaking on the saturated fat portion of this video, the Journal of American College of Cardiology wrote in a study in August of 2020: “Several foods relatively rich in SFAs, such as whole-fat dairy, dark chocolate, and unprocessed meat, are not associated with increased CVD or diabetes risk. There is no robust evidence that current population-wide arbitrary upper limits on saturated fat consumption in the United States will prevent CVD or reduce mortality.” Thoughts?

Yes. So many people on here saying, 'Yeah, this 'seed oil is bad' is just nonsense', will readily believe that 'saturated fat is bad for you' when study after study shows no correlation between saturated fat and heart disease. Apparently to Layne and other gullible people, canola oil is healthier for you than saturated fat found naturally in our meat and foods. Sounds like they are still brainwashed to me. The last 40 years has shown that this advice has made us sicker and fatter. Not sure why Layne seems to think this is scientifically sound nutritional advice.
Quite simple. Foods are different, in part because of the varying fatty acid composition in those foods, and the other chemicals they contain that interact with them. Try looking up the food matrix effect.

If he truly 'crunched through the papers' he would see that study after study debunks his views on saturated fat. There is no correlation between saturated fat and heart disease or cardiac events. This has been born out by multiple studies and evaluation and debunking of studies that said there was a causation. Layne is not the 'be all, end all' of nutritional science. There are just as many qualified individuals in his field who are saying the exact opposite of Layne regarding seed oils and saturated fat. And they have the studies to back up their information as well. We must discern and sift, compare and contrast.

When I haven’t used vegetable oil and seed oils in months, but then I decided to cook my traditional fried chicken so I used vegetable oil to deep fry because I didn’t have enough lard. After eating the fried chicken, I started feeling my gout, just a little but I did feel it coming 😂

I have a sincere question. Are the health benefits of carnivore diet coming STRICTLY from eliminating potential triggers? Why are people experiencing life changing symptom relief (gut issues, mental clariry, joint pain, skin health, and increased energy)? If elimination diet is so powerful and healing, why is it that only carnivore diet is known to be effective? I understand that studies are important, but I have witnessed people and read thousands of anecdotal storires of the benefits and i am very confused. Also, do you think that the USDA guideline on the ratio of macronutrients are health promoting and that as long as we eat less calories then we would be healthy?
There are no benefits of the carnivore diet unless you are in the micro percentage of people with crazy food allergies.
Probably cause proccessed foods are bad, and if its just meat that isn't heavily processed yes they will be healthier than those who do eat crappy processed meats but those who are whole food plant based are healthier than non processed meat eaters🤷♀️...

I ditched seed oils in 2015 and my health is amazing. My C-RP is 0.2 while eating a lot of high quality animal fats 😋 (raw dairy, egg yolks, pasture raised animals etc...).
The processing of seed oils is all you need to know about that...

Well if you replace omega 6 fatty acids & oils to omega 3 it sure have health benefits. And if you do that in ketosis, it will improve your health alot. We sure need some of the omega 6 as well, but way less that omega 3.
If you combine this that you give up carbs and high fructose corn cyrup (that and seed oils are everything high processed foods) those things have huge positive impact to your health over all. No-one can´t deny that or they just don´t know what they are talking about.
I did that even before i started ketogenic lifestyle over eight months ago. But still i gained more weight and became insuine resistant eating carb based diet over 40 years (even eating low carbs). So i can only say that carbs are more of the problem than seed oils.
Stopping carbs i have reversed insuline resistance and my blood work is great. All the health benefits are amazing.
Also that i consume more of proteine now have my body to healing process i´m going through right now. Four more months and i´m done this a year. I can say at this point that i will be healthier at that time that i were at my 20s.

I only use butter & tallow and yet I'm rail thin. Animal fats were used almost exclusively before the 1920s. Yet obesity rates are skyrocketing after Crisco and canola oil have been introduced..

I get horrible bloody nose after consuming any seed oils. Saturated fat is the only fat I can consume without a bloody nose. My own personal experience is the only "Study" that matters to me.

I am totally on board to not get dragged from biased health influencer and “studies “ that support their theories. I can feel your frustration. As Italian I still don’t use any seed oil, but it’s just culture I guess. Back home we fry (very little) in lard or peanut oil (last 20 years) and we use mostly extra virgin olive for everything else, little butter here and there. Along with eating a veggies, fruit and grains rich whole foods omnivore diet . I moved to Canada in my 30’s and the shock I got from seeing how much more ill people compare to Italy it’s impossible to erase. Will never abandon my Mediterranean lifestyle ❤😂

Would love to see an episide on mercury in fish, and does selenium in fish help combat mercury levels in tuna for example, some people say only really small fish are safe to eat, like sardines
The mercury content in fish is so low…you’d need to eat something like 100pounds per week for a long ass time…to reach the minimum toxicity for a pregnant woman…the guidelines are 10x below the actual toxicity levels.
Yeah, I think the statistics I read were 136 cans of tuna would have to be eaten a month to go above the recommended safe intake threshold.@@daveschilz7233
You discuss replacing saturated fats with Seed Oil, but I think most (looking to be healthy) would be more interested in the advantages of replacing Seed Oils with Olive , Avocado oils (higher in Mono than Poly or Sat fats) and what control studies show are the advantages of that substitution.

Studies suggest polyunsaturated fat might be even better than monounsaturated fat regarding the prevention of CVD. Regarding inflammation there is no difference or at least the studies didn’t seem to find any. I use Olive oil mainly because I love the tase but I don’t mind seed oils either.
There are not very many studies on monounsaturated fats for some reason. Probably just lack of interest.
I personally want to keep my saturated fat intake as low as possible while keeping my omega 3,6,9 as high as possible so I can get the most nutrients out of the calories from the fat. Olive oil is a good option but I also like my canola oil
I did that and biggest thing I've noticed is that I've gone the entire year without getting sunburned. Polyunsaturated acids oxidize more easily that saturated or mono when exposed to UV and that oxidation of the fatty acids in your skin is what causes sunburn (and possibly cancer.)

Wish this video had addressed the more interesting comparison of omega-6 vs omega-3 PUVAs in most seed oils as compared to other alternate oils that used to dominate our diets. The biochemical difference is large. I have an open mind whether there will be found a long-term health effect. In the meantime, I choose canola and olive oils over other, omega-6-rich, oils.

Sesame seed oil is the oldest cooking seed oil and goes back 10,000 years and it reduces inflammation in multiple studies. Most seed oils are over processed and trash but some are beneficial. I still rather have olive oil and grass fed butter/ghee. They also go back 10,000 years

I'd say it depends on what you mean by "bad". Bad for you? Well, as stated in the video: not necessarily, saturated fat seems to be more of an issue. Bad for environment, pollution etc? Perhaps, but that's not something that the video addresses. Here we're purely looking at the health impacts of them.
@@kkrizzz I speak about REFINED oils. If you have to use chemicals to make a product stable, it doesn't seem right to me. We can take jus Hexane alone. I don't think this experiment is going to be beneficial in a long term. And it is very hard to define issues with saturated fats as the refined oils are everywhere, so it is not easy to do a proper RCT research in a long run. Epidemiology is better than nothing but far from conclusive.

My further request would be, could you take a look at Dr. Cate Shanahan's videos, and give your take on the mechanisms she cites as to why/how seed oils are causing problems in our diet? Seed oils are used in everything which causes everything to be entirely way more dense. You also brought up seed oils are bad in excess but they are used in absolutely everything when you go out to eat, or get snacks
About omega 6. Long story short, this stopped my chronic migraines. If I stop taking it, the headaches return. I have been taking this since 2018, and my bloodwork is good. So, of course, I have shared this with my other friends who have chronic headaches, and they have the same results. I still get headaches periodically, but they are not almost daily, and mild compared to what they used to be. Oh, and it helps with hot flashes. My friend just went through 2 rounds of chemo over the past couple of years and it should have sent her into menopause but didn't. The doctors were shocked.

There’s no good evidence that the problem is seed oil, but I think it’s somewhat useless to just say the problem is more calories. Yes, the problem is more calories, but why is the population eating more calories? If your answer is personal accountability, then why did that change? Personally, I think Stephan Guyenet is on the right track. The food industry has created seductive, habit-forming, cheap, convenient food with high energy density, high sugar/carb, high fat, high energy density, low fiber, etc. It’s not one nutrient change. It’s a combination of factors.

The video literally confirms to stay away from the oils and to be conscious of the food you consume.
I've dived into a few studies, mainly meta-analyses, that I've seen referenced in videos like this which take the anti-saturated fat (mainstream) PoV. Somehow they never quite check out. For example, you see studies which indicated lower cardiovascular events with lower saturated fat, BUT in the fine print you discover that all-cause mortality was not improved. And for example, in the "sat fat increases lung cancer" study linked in this video description, the fine print showed that sat fat consumers who never smoked did not have have statistically significant increase in lung cancer. Every single study I've looked at has major holes in it like that. So I'll stay open and keep researching. But I'm not convinced of the mainstream PoV that completely novel industrialised oils are magically better for us than ancestral diets. There is a LOT of money from industry pushing this, from both big agra and pharma, so the burden of proof rests with them and I'm not convinced it's there.
The reason mortality is very often not reduced is very simple: it takes many years to die from a bad diet. Smoking also doesn’t increase mortality if you study it for just a year or two. This is entirely expected.
The acid e is clear and quality meta analyses of RCTs and cohort studies show a clear pattern: replacing sat fats with PUFAs reduces CVD. It’s that simple.

It’s only true within the context of a diet that does not supply arachidonic acid and DHA. In other words, if your diet counts on converting the precursors to the active forms, then the ratio matters, because that dictates enzymatic competition. However, if you consume eggs, liver, and fatty fish fairly regularly, then the ratio is of no concern.

australian here, we burn in the sun and i'm very much an old fashiioned hippy who hates toxic sunscreens (but i will use zinc). I too avoid seed oils but dont think this will change anything when i choose to expose myself to our harsh sun.
