    Ethanol evaporates at 180 degrees faranheit, methanol evaporates at 155 degrees faranheit. They are both useful but one can kill you, so fermenting isn't complete until you separate the 2... and in doing so not only will a percentage of the yeast survive but also its somewhat effective as a Pasteurization method. Also removes Carbon Monoxide. If you want a nice head you recarbonate it later.

      To clarify, both alcohols "evaporate" at room temperature. You have provided the boiling points, which is especially relevant during distillation :)
