    I didn't know that in a michelin star restaurant the cooked seafood is cut on the raw meat board?!?!?!

    • @mhartan
      @mhartan Před 3 měsíci

      Why do you think it was a raw meat board? It was clean and no meat to be seen.

      I don't think I know because I work in the same business. According to Hazard Analysis & Critical Control Point procedures, the correct colour coded cutting board must be used to prevent cross contamination. Red colour board is used only for raw meat!

    Has anyone thought what everyday food would look and taste like if prepared by this chef? If you asked him to make a breakfast say with eggs grits toast and a pancke.

    Perhaps not the most visually stunning presentation (to me at least), but it looks delicious. I can literally taste the flavors on my palate in my mind right now!!! The sumptuous seafood, the fresh lettuce, and everything enhanced by the various dressings. Simple and without frills, but all the better for it as the core flavors are allowed to fully shine😉

      I agree, but what I love about the presentation is that it looks like a plate of food rather than a minimalist design. Love those green lettuce leaves, and the colours of the seafood and not a foam or gel in sight!

      @@ydocmit I agree with you, it looks delicious and again, I can literally taste those beautiful flavors on my palate as I visualize the dish in my head! But I’ve been to many Michelin Star restaurants and you usually expect something a bit more polished, and that doesn’t necessarily mean foam and/or gels. Just look at the other videos for Schwarzwaldstube, they don’t use foams and gels and they look more the part, so to speak😊

      @@Tennisisreallyfun We're on the same page, I think, and I've been to *** restaurants too. I suppose I just prefer this less fussy presentation. It reminds me of restaurants of the past, and I'm more than happy with the looks.

      @@ydocmitYeah, definitely, I’m happy too, we are on the same page as you say😉 And at the end of the day, flavor matters more than anything, and I know that this restaurant beats any of my local started restaurants here in California completely out of the water.

    Beautiful dish. My one complaint is how much remaining seafood Chef prepared that didn’t make it to the final plating. What an unnecessary waste of premium product. That said, the dish itself is stunning. Cheers.🥂

      Dude, dont you understand this is a showcase? In restaurants like this there is no waste. But for one dish you cant cook up the exact number needed for 1 plate.

      Trust me, that seafood goes to the next plate. They’re not going to throw away such expensive seafood that they spent quite a lot of money on to begin with.
