    I feel like that chicken is telling us something @ 12:21 ... all jokes aside these are the kind of videos I enjoy the most about this channel. Masters of their craft at work, from raw ingredients straight out of the fridge to a completed dish, all steps visible. Awesome.

    You can feel the work coming off the kitchen just by the pace of Chefs trussing, u can tell how many times hes had the pressure of getting things ready for service, you can feel how much work goes into keeping an actively used rotissier looking BRAND NEW

    Chef pays attention to serve the "oyster" from each side. The best part as he mentioned. Very smart. Very nice.
    Well done tightening up the filets and wings as well.
    I grew more impressed as the video progressed.
    Clean, nicely served en cocotte.
    Beautiful kitchen and serveware.

    This gives you an idea of the amount of work chefs of this level have to do. It’s not even a job at this stage, it’s a calling, a complete lifestyle choice. This is an amazing looking dish, you honoured that chicken well chef 👏👏👏👏👏

    Amazing to watch a world class chef at work. Honestly i would find it rather entertaining to watch the chef eating a delightful meal such as this so we can learn a bit of etiquette 😌

    I hate to think as to how much this would have cost but now after my wife passing I have had to learn how to cook for my self.
    Not being good at following recepies I was able to get an idea as to what tasted OK especially if I forgot about it for a while.
    Now I have no desire to go to a restaurant to see if anyone but the advertised chef can actually cook what is advertised properly.
    There is not enough objective criticism of over priced restaurants.I have seen where an upmarket restaurant claimed that the only profit was in the wine sales.
    So why didn't they just open a wine bar?

    That’s far from a world class dish. I was taught to prepare chickens, long leg for roast, blanching skinning, trimming feet 50 years ago.
    1. Very messily/cleaned prepared chicken.
    2. Very poorly carved chucked.
    3. Vast needless waste of butter…. Just totally pointless, of no value whatsoever.
    4. Blow torch to skin feet? Very messy. Easier, cleaner, just plunch into boiling water 45 seconds.
    All in all a “very modest” attempt at roast chicken, Nicely plated, on a nice plate. Nothing special at all. I cook my own roast chicken all the time as good… at home…. if not better. Not knocking the guy but not worthy of such a long draw out video that brings “very little to the table”

      I always trip out when I watch working kitchen videos it seems like noone cares about salmonella and cross contamination. After touching chicken I wash my hands with water and don't let it come in contact with anything other than a plastic cutting board.

      Yes, and also because there are other spieces of chickens that are different in feathers, skin colour, size.
      What they eat and how they grow and for how long they grow is a reason too.

      The butter is thrown out at the end of service. Hard to cross-contaminate a substance that is being broiled and melted at high heat

    I'd pay 200 dollars for my wife and I to eat this just once. Looks fantastic. I have no idea what this would cost but I'm sure it's steep. You only live once.

      5 course meal starts at 135 EUR and 6 courses at 165 EUR, 3 course lunch at 56 EUR. So for a special occasion it's doable for normal working middle class people I guess. But 2 star Michelin food..is an experience. the attention to detail, all the layering of texture and flavors.

    That’s an expensive dish, and for that expensive dish, I want more than just two slices of white truffle. I love white truffles, they truly a are a heavenly ingredient to eat. If you have an ingredient, don’t be afraid of it, use it!!!

    this is just stupid to watch. he wasted a lot of time on preparing the chicken, and at the end, the breast doesn't even covered entirely by the skin. and searing it after roasting the whole bird? sure, it wont get dry at all.

      In the finished chicken when he used the big black knife he used to cut the raw bird. WTF. I see Ramsey do it to. He will touch chicken not wash his hand just rinse and use his bib towel then keep cooking and use same said towel after touching everything. I don't get it.

    Don't get me wrong chef. You didn't get michelin star just like that..but there is no point tu put little rosmary and thyme inside of the chicken. It will not give any flavour in that small quantity specialy without marination.
