332g flour
10g flour
Room temp ferment 24 hours
Divide into roughly 250g before cold fermenting
Cold ferment up to 2 days in the fridge
Before using coat with flour (whatever naturally sticks)
(Makes 2 pizzas)

NY style works a lot better with home ovens. but all the way cranked up! like 550-600
