For those who wanna know how to actually make a carbonara
Not onion, don't add onion
Pancetta, although a decent substitute, should be guanciale
And Parmiggiano is the wrong cheese, use Pecorino romano.
As for the eggs and pecorino mix, only add them after the dish has sufficiently cooled to around 58°C so the eggs don't overcook. Save some pasta water to stop the spaghetti from burning when you throw it in the pan. But if you're here you probably already know how to make this dish
You can use a mix of parmiggiano and pecorino. It depends on your preference and taste. Pecorino for the full original recipe, a mix 70-30 or even 50-50 if you think it is too strong.
No, Guanciale is not a substitute for pancetta. Guanciale is the one and only thing you should be out in carbonara. Pancetta is not an ingredient of carbonara
@@jackwhitbread4583 The original recipe used pancetta, did you know that? Guanciale came afterwards and it is the better choice, but you can get a decent version with a good quality pancetta (not the pre-diced one of course).
@@jackwhitbread4583 I've studied Italian food and culture a lot, I'm currently in Palermo for vacation and studying the cuisine. Every local chef I've met who spoke about pasta said that they often substitute guanciale with pancetta as it's a good substitute. It won't taste the same, but a carbonara is more like technique, not a specific dish. The traditional carbonara yes uses guanciale, but it's expensive especially nowadays.

My grandmother who was Italian made carbonara several times with Spam back in the sixties they got Commodities and they got these big huge cans of spam that they used for meat and that's all they had to use I can remember eating it and it was good

The type of cheese and meat used in cabonara is highly regional. Some italian cabonaras contain pancetta and Parmigianino
In France, this is usually the way we doing carbonara, adding onions and the bacons bits, don't really know why we did it that way but it's taste good

The oldest recorded recipes for carbonara used parmigiano and pancetta. Guanciale and pecorino didn't start showing up in recipe books until a decade later. The way Italians act as though there are hard set rules on the ingredients is silly. Some early recipes even had cream in them. The current "traditional" carbonara is a very recent creation.
He forgot to temper the eggs with pasta water and probably didn't take the pasta off the heat and he didn't add pasta water to the pan. Proper ingredients for carbonara are guanciale,black pepper, eggs (I use 3 or 4 egg yolks and one whole egg), and pecorino romano

Tip: use egg yolk when you finished and stir with the pasta (don't cold the pasta with water) and then the egg yolk cooks with the heat of the pasta

You can replace guanciale with pancetta only if you can't find guanciale. But the onions are a big no. And the eggs have to be mixed with pecorino romano cheese, not parmigiano. You can do 50-50 pecorino-parmigiano, but it has to be at least 50% pecorino. Another thing missing is the pasta water. When adding the pasta water and the guanciale/pancetta rendered fat, it emulsifies, preventing egg curdling.

Too hot pan = over cooked/scrambled eggs and that actually goes for all egg dishes like omlettes unless you are American and want some "caramelized" omlette 😂

In France we completely screw the traditional carbonara recipe, ultra thick cream, thick sliced smoked belly pork, oinons and mushrooms but no eggs or parmigiana, a so totally new recipe than eben now we named it pate a la forestière 😅 and that's a pretty decent recipe.

Actually, if you are gonna make Carbonara with Pancetta, you do want to add some extra seasoning and ingredients you usually don't add if you are using Guanciale. Like the pepper, or even garlic. Pancetta isn't as spiced as Guanciale.

If you find pasta granaro, you also should be able to find pecorino and guanciale. No oil, no onion.
To toss in the pan only pasta and guanciale and then, with 0 flame and/or no heat from induction plate mix it with eggs with a bunch of black grounded pepper and pecorino.

That was Mexican spaghetti it’s what Mexican moms do when rushing off to their third job to put food on the table making sure kids are fed !
