Easy grilled meat Pita Pockets - Lebanese Arayes with a spiced meat filling

Ingredients:
5-6 Flat breads (pita or Lebanese bread
500g (1lb) Minced Beef (or you can use lamb)
30g (1oz)Parsley
1 Medium brown onions
1-2 Garlic Cloves
1 1/2 Tbsp Pomegranate Molasses
1-2 Tbsp oil + more
1 Tsp salt
1/2 Tsp Boharat
1/4 Tsp pepper
1/4 Tsp Cayenne
1/8 Tsp Cinnamon

Directions:
To make the meat filling:
1. Add your Onion and parsley to a food processor or blender, and process till very finely chopped
2. Combine meat and remaining ingredients (apart from the bread) in a mixing bowl and mix thoroughly until well combined
3. Cook a small piece of the meat in a pan and taste for seasoning. Adjust if necessary
To prepare the Arayes:
1. For the pita, microwave the bread for 30 seconds and then slice into pockets or quarters
a. If using Lebanese bread there is no need to microwave
2. Use a knife to pry both sides of the bread apart till a pocket has formed
3. Add a few tablespoons of the meat filling to each pocket and massage to the edges of the bread. Aim to have the Pita about 1cm (1/3in) thick, or 1/2cm (1/6in) thick for the Lebanese bread. Stuff the bread pieces till you have used up the meat mixture
4. Use a brush to oil both sides of the bread generously with olive oil
To cook the Arayes:
1. Preheat a grill pan on medium high heat and when ready add your Arayes to the pan
2. Grill for 4 minutes (3 for Lebanese bread) and then flip once they start to sizzle
3. Cook for a further 4 (or 3) minutes and then remove from the pan
Prepare a simple chopped parsley and onion salad and serve the Arayes.

Also to anyone that has easier access to pomegranate juice but not molasses- it’s just simmering the pom juice with sugar and lemon juice. :)
I remember making pita bread from scratch 20 plus years ago. It was from the Julia Child's cookbook and it was wild. Never before have I cooked bread for 15 seconds at 500 degrees! Unfortunately my old oven didn't survive the recipe, but dang it was good bread. My kitchen was covered in cooling pita, because I was swapping out the bread so often that I didn't know what to do with the cooked pieces.
This recipe has become a favorite in our household. I've made it quite a few times with vegan mince, and sometimes a mix of vegan mince and mushrooms. I've also found that I need to add a bit more of the spices and pomegranate molasses, it might be because I'm using vegan mince. It's deeeeeeeeelicious.

I made this and it is so delicious!!! I spotted some ciabatta pockets from Tesco which I used instead of the suggested ones. Served with macerated onions and garlic + herb yoghurt as a dip. Just delicious!! X

I'd really recommend mortar and pestle for things like garlic. It's fun to use, allows you to start buying your spices as whole and I swear there's just something to the stuff you mince in mortar. And I believe it also fits well with traditional recipes. It's also not a big investment. I don't know about other places, but even in high work cost Finland you can get one for less than 15€ made from local stone (a bit more than a fastfood meal or a pizza).
Internet also taught me to make pita bread and it's so good, but easy and quick to make. Totally worth it to make yourself.

I finally made these after having the recipes for ages. They really are delicious and very easy to make as long as you have a food processor - and decent pitas. I tried using store bought bread, but they just weren’t easy to work with. It’s much better if you make your own, but I’m not going to do that on a weeknight. Thanks for a great recipe. I’ve also made this vegetarian by using either beyond beef or textured vegetable protein crumbles. They were quite good, but the family consensus was the original ground beef version is the best.

Very clear and comprehensive explanation of a traditional recipe. I'm definitely going to give it a go. My only question is about the meat. I dislike undercooked meat of any kind and am worried about how cooked through the meat comes out with these.
I'm not exactly a seasoned cook yet but this is one of the best things I've ever made, just delicious; my girlfriend thought the same. I did think that the 1/2 tsp baharat in the recipe seemed a bit small so I upped to this to 1 tsp, maybe closer to 2 tsp (I saw another recipe that used 1 Tbsp!).
Anyone else making this, don't underestimate the prep time! It seemed to take forever to open and stuff the pittas, especially since they were so prone to tearing - I had to be super careful. It also took longer than 4 minutes/side to cook, although since it was tricky to get them all a consistent thickness this was variable.
Really enjoyed this Obi. I've done it twice now with 20% fat Lamb and 5% fat beef. IMO the lean beef was best as the lamb was a bit too greasy. I prefer the Lebanese bread as the arayes turn out lighter. I have used a bit more pomegranate molasses and cayenne than suggested but each to his own. As you say - it is quick and easy and delicious. Thank you for sharing this with us and for your enthusiasm and practical tips.

@@MiddleEats chicken mandi is great, but might be harder, as traditionally it's cooked in a hole in the ground or a tannour.

@@MiddleEats definitely! When living in Amman, I used to eat at a Yemeni restaurant once a week, it was so good.
Haneedh is a similar dish to Mandi, but with lamb. Fahsa is really good too, and might be easier to make. Yemeni grilled fish is really good too. They should all be served with sahaweq of course. And for dessert I'd recommend maasoub or arika.

Yes very similar, but Hawawshi is spicier and fattier. We have a great family recipe for it.

Hi, it will 100% cook through in that time. The bread is very very thin and it will transfer the heat into the mince. You can always cook this longer, but the bread will likely burn. Cooked mince won't give the same effect, as the key is for the bread to absorb the meat juices as it cooks. If you are worried you can bake this in the oven, or use a meat thermometer to check that it reaches a safe temperature
I asked the same question and I am still not convinced that meat will cook completely. It may if you are also cooking the pita at the same time but we are using the cooked pita here 🙄
How? If the bread is raw and you cook it, the bread has to cook before the meat cooks? What you are saying makes no sense. It's like saying dumplings should have the meat cooked before stuffing or ravioli

Yes that's plenty of time for it to cook through. It's the same as cooking a burger.

You can make pomegranate molasses by boiling pomegranate juice until it's thick and syrupy. If not, you need something sweet and something acidic to replace it, maybe some lemon and honey will be ok?

I've bought baharat seasoning from a regular supermarket before but you could also make your own. If you're in the UK, Google International or turkish supermarkets near you for the pomegranate molasses (loads of turkish supermarkets in London). If not, there are a few online stores you can get it from but they tend to charge more.
what if we cook the beef mix before we stuff it into the lebanese bread, would that make the lebanese bread version crispy? I assume the lebanese version is soggy from the water inside the meat when it's cooking
No the meat will end up dry and it won't stick to the bread. Just fry the sides if you want it crispy

Food Porn here! Ymmm....yes, love Pita Bread, here in Mexico the principal comercial brand is Libanius, but homemade is better. A Lebanese lady from Denver, CO. shared her recipe in the Denver Post, Mom made the recipe and so COOL watching the Pita rise, just like a Corn tortilla! Definitely making these, parsley, there is parsley sold here, but thinking could we also sub with cilantro (fresh coriander)? As for achieving the fresh made garlic paste, learned a new way to make this, but easier how my mom used to make the garlic, she would ground the garlic clove with a little rock salt in her molcajete(stone and pestle), this is the way we process garlic for making a spicy hot salsa.
