Ingredients
1 cup quinoa flour (I used Namaste Brand)
1 tbsp psyllium husk powder
1 tsp baking powder
¼ tsp salt
¼ cup peanut butter (xxx grams, melted)
1 ½ large ripe bananas, mashed (the other ½ for garnish)
1 cup milk
1 egg, beaten
1 teaspoon pure vanilla extract
Ingredients for Garnish
½ banana sliced
crispy bacon crumbled
⅓ cup melted peanut butter

Anne, I think the king would be impressed. It has all of the quintessential ingredients that Elvis loved. Having go wrong with this pancake recipe.
I have yet to try Quinoa flour. What a great looking stake of pancakes. You make the best food my friend.
I didn't even know there was such a thing as quinoa flour. Remember when i made the Quinoa pizza I actually soaked regular quinoa then ground it in the food processor to make the crust dough. I might have to revisit that recipe. Quinoa flour could certainly simplify things.
This is a breakfast stack to end them all.

Anne, I could have eaten that entire that entire bowl of thick homogenous batter before you even poured it out into the skillet. But it only got better after that! I never thought much of Elvis's famous combination, but that was before seeing your quinoa pancakes! My knees are weak and quivering just looking at this stack of pancakes! All I can say is thank you, thank you very much! You can't remember Elvis, can you? You're too young!

Elvis supposedly ate peanut butter, banana and bacon sandwiches all the time so I figured why not try it out as a pancake stack. So good.
