    Summer Soup is a very traditional eastern NC soup. It may be popular elsewhere, but I'm from here so this is what I know. This is an ideal way to enjoy the fruits of your garden harvest and even have them in your pantry through the winter. This soup uses a small amount of ham for seasoning and it is SAFE as it is using the same ratio of ham to vegetables as you will find in the tested safe recipe for Split Pea with Ham soup.
    Some say that you can never can ham, but if you follow the principles in the tested recipes, you certainly can can ham - but just know what you're doing. This is not something that brand new or inexperienced canners should do, but modifying recipes with the same content principles is how we wind up with so many canning cookbooks with lots of safe recipes.
    In this video I'm canning 9 pints. The ingredients are:
    • just under 2 cups of ham
    • corn
    • okra
    • green beans
    • fresh (or frozen) lima beans (not dried lima beans)
    • tomato
    • salt

    I love this! Just a great way to use up even the smallest bit of your garden harvest. This would be excellent for using leftovers too. These days I hate to throw out even a spoonful of food. Love it 👍

      This is such a great soup, and it would be just fine for anything you want to add. If you'd rather use some salt pork or ham hock for seasoning, that's fine, too. Main thing is this is just not a heavy tomato based soup so it's got a light flavor. If you make it, I hope you enjoy it. Even if you don't can it, it's delicious to just cook and eat!

    Excellent summer soup! I'm not wasting anything out of the garden. I changed out my jiggler on my gauged canner, best thing I ever did!

      Tell me about it! The jiggler is a game changer! Honestly, I don’t know why they don’t just equip canners with those to start! I guess it’s a good way to make a little extra money since most people will buy a canner and will keep the same one for decades, perhaps only replacing some of the internal parts from time to time. 😄

      @@OldTimeKnowledge I had my larger canner with the jiggler that wouldn't work on my glass top burners. I got a small version (same brand) with gauge. I hate the gauge! I took jiggler off the old canner and it fit the new one, best thing I ever did. I made sure it fit properly before I tried it. Been working perfectly.

      I think canning small amounts of ham is fine. We're just not supposed to can large pieces of ham because of its density and it being untested for safe canning times. Thank you for watching and taking time to comment!
