Just made this! I was a little "extra" and made a basting/glaze sauce for it. I forgot the proportions but I did: brown sugar, vegan butter, ACV, orange juice, sesame oil, soy sauce, salt, pepper, onion powder and taste tested until it was right.
After steaming I baked the seitan and basted it every 10 minutes, then a few times after it was out of the oven and cooling.
Can't wait to try it lol

A lot of ppl prob already know but just in case its helpful for anybody, you said you could get a big thing of tofu at Costco. I just wanted to add that the oriental grocery stores are also an excellent place to get tofu way cheaper than the regular supermarket. And Indian grocery stores for chickpea flour. If you live in the city like me and Costco is all the way out in the suburbs, it could be a little easier too. Thank you for the video! Oh yeah do you think it would be ok if maybe after steaming it but before putting it in the oven, if you poked a couple holes in the foil with a fork? To keep it from exploding?

You can also do this in a high end mixer with a dough hook for 10 minutes. More kneading and less work. Makes the texture even better. Also, spray the parchment with non stick. Dijon mustard would put it over the top. And picked red onion. Love you guys. Cheers from Ontario Canada. ❤️🌱❤️🌱🌱❤️

I love how intensely interested Chris is in the rolling process. 13:01 haha My friends tell me that's how I look when I'm watching a video or reading.
I have tried so many different seitan recipes and none quite do it. I have to try this one for sure. I found that if you sear the slices of seitan in a frying pan it gives it an amazing flavor. It's like the crispy end of meat that sits in the juice during cooking (you know, that part that is full of flavor). You can also wrap it right out of the pan so the steam softens it after it's chilled if you don't want that crispy texture. (personally, that was my favorite part when I use to eat meat.)
I literally bought a meat slicer from Amazon just to get those thin deli sliced cold cuts. ( I bought the cheap $50 one and it works great.)

I am sure it can be done without the gluten. More besan, tapioca, perhaps, irish moss.... The gluten will mean a lot of people won't want It. Will try it....

OMG, that looks amazing! I LOVE sandwiches, and I haven't had a good sandwich since I've gone vegan. How heavy is the loaf? How long can it keep in the fridge, and can it be frozen? I may be making this tomorrow!

I often make the vegan dad version and put half in the freezer - I find it comes out best if you slice then freeze. I preslice the whole loaf and drizzle a little oil on, then freeze half of that. The oil keeps it nice and moist.

They have very different consistencies in recipes so I don't think it would work
