- San Antonio puffy tacos are a special treat and surprisingly easy to make. This is my version of this Tex-Mex favorite. Hope you give them a try!

@Ken Click, Ken my Christian bretheren, outstanding recipe & I think I requested you to make these, I have a medical condition that affects my short term memory so I don't recall, but either way these look great & I like chix, beef, etc... but I think I'll make them with colossal size p&d shrimp,, I learned many yrs ago from a chef that the larger the crustacean, the more flavor, so I'm buying the largest gulf shrimp I can afford, I've seen these puffy tacos on food sites, but never had one so I really want to try them. I think for sides I'll have refried beans & sweet corn, God bless you & yours & ty for this recipe brother, Amen

@Ken Click , I'm a long time subscriber who loves your videos & your soothing voice. I very seldom comment on anyones' channel. But when I saw these San Antonio puffy tacos, I couldn't resist! They look beautifully delicious ! I was born, raised & live til I die in Austin. My sisters & I love going to S.A. just to eat at their Mexican restaurants. I must admit, they are the best! Anyhow, thanks for this (and all) your videos, 'preciate it! Oh! And please consider the suggestion on making Alambres. That's something that sounds great and I've never even heard of!

Ken, your biscuits for two became my favorite biscuit recipe by far, and I have shared it with friends who love it. My best friend’s husband has terminal cancer and doesn’t enjoy much food any more, but he still loves those biscuits, which she makes often now. Thank you.

These are more guidelines than a full on recipe. (This is a Mexico City style alambre, other states might have other styles.)
You have two proteins, primary, and secondary.
Primary is your main meat: it can be chicken, beef, or pork. I recommend small cubes for chicken (Thighs, because chicken breast might be too dry), and pork. Beef can be any cheap cut that isn't too dry, small strips work best.
Secondary is one of the following: Chorizo, longaniza, chistorra, or bacon.
This is a three part process.
These amounts are for a total of four people, or two really really hungry ones.
You will be needing tortillas, either wheat or corn tortillas, it's up to you.
Part 1, Base:
Chop 1 onion, 3 cloves of garlic, 2 small bell peppers, 1 large nopal (small strips or fine bits works best).
Chop your secondary protein in small chunks, about half an inch on each side, or smaller if you want a
In a large skillet, (pick one that is at least 2 inches deep)
Throw in the secondary protein on medium heat, being mindful of fat starting to be rendered, when you have a small layer of fat, add the onions, then turn up the heat a touch.
Add the bell peppers, nopales, and lastly the garlic.
Optional: add chopped Pasilla chili, if you want heat.
Once you see the nopales turn a darker green, turn the heat down to low.
Optional: let your tortillas steam right on top of your base as it cooks on low, they will absorb a bit of juices and gain flavour. Remove and put in a tortilla pouch before the next step.
Deglaze with chicken stock, or water if you do not have any. Red wine or beer can also be used here if you want.
Your base is ready.
Part 2, Meat:
Salt and pepper the meat before adding, a marinade is optional but a good way to add different flavours.
Add the meat and turn the heat to medium high, let the outside of the meat sear a little bit, then put a lid on the skillet and turn the heat to medium low.
Check on the meat, and once it is cooked through, move on to the next part.
Part 3, Cheese:
There are many options for cheese, gouda works well and melts quickly, if you can get quesillo (oaxaca style cheese) it's great, and has a higher melting point. Manchego and Chihuahua style cheeses are great too.
Grate or slice your cheese while the meat finishes cooking.
Turn down the heat to low, and add the cheese, cover the meat, then let melt, and mix, do that 2 or 3 times.
If the dish feels too dry, you can add a touch of milk to help the cheese emulsify.
Once you are happy with the melt on the cheese, your alambre is ready.
Be sure to have warm tortillas on hand.
The most important part, share it with your loved ones.
Typically you either plate individually, or put the skillet at the center of your table. either way every person makes their own tacos.
My favourite combinations are chicken-chorizo, and bacon-beef.

@@eltorpedo67 You can skip it if need be, but keep an eye out for good mexican places and ask around. You can also add mushrooms for a different flavour profile. Let me know how it goes.

The stove top biscuit recipe is the bomb, I've made it several times now. It's great, but I couldn't make this work. I used a different brand of corn flour, Minsa, as there are several to choose from where I am in the southwest. The tortillas were anything but puffy. More like heavy corn saucers. I tried remaking the dough and even put some baking powder in it to help get something that seems puffy but it made no difference. I tried making them thinner and even used a rolling pin on them to thin them out. The oil was hot when I put them in. Mine looked nothing like yours. I have no idea what I did wrong. 😞
Don't give up. Follow the video step by step and double check your ingredients. You'll get it! 🙂
