      I cooked it slightly more :) I didn't mean to, though, but it turned out great anyway. It's like spongy and soft on the inside, while crunchy or crispy on the outside. It feels lighter in a way than ordinary omelets. It also puffed up when I cooked it, but fell down slightly because of the overcooking. still good, though.

    Tried this twice. First attempt didn't turn out so well - I over cooked the bottom and it got nasty. Second try, with mot attention to my heat from the gas, I got a beautiful buttery-crispy bottom and a perfect soufflé-like top.
    This works very well. Like all egg recipes, tiny variations in your method will lead to vastly different results. Try, try again!

    J'ai réussi du premier coup 💪🏽. Je ne suis pas un as de la cuisine à la base. C'est l'omelette à la perfection avec cette technique, en Plus quand je l'ai plié dans l'assiette une fois sortie de la poêle, la mousse continu à cuire, au bout d'une minute c'est parfait, croustillant, moelleux et onctueux à l'intérieur, on sent bien les trois étapes une fois en bouche 😍😍😍

    This kind of omelette was invented by "La Mère Poulard" which has its famous restaurant at Le Mont Saint Michel in Brittany, not Jean Imbert !
    Another simple technique is to beat the white part of eggs in foam with a pinch of salt., after beat the yellow part like a traditionnal omelette, with salt and pepper.
    You start cooking the yellow part and stir in the egg whites, stirring several times. When the mixture is homogeneous, you do like the video. Cooking is done on high heat at the beginning and at the end medium heat.
    You can cover if you want your omelette well-cooked.

    Excellent recipe. Almost you don't need to add anything else. Great texture. It seems like is not cooked enough but inside is perfect.

    Some people are saying that this is overcooked outside and raw inside. If the eggs were overcooked you would notice something called syneresis, the appearances of bubbles due to the proteins of the (mainly the albumin from the egg-white) egg forcing out the water. The color of the omelette is mainly from the butter that he added, the proteins in butter tend to brown more quickly than the egg ( it is true that a traditional french omelette should have no color but, he said that's not what this is.)
    The egg can still be cooked (in the sense that it is safe to eat.) the egg white of an egg will set at 145 F while the yolk sets at 155 F , but you can kill all of the microbes if you bring it to 135 F for around 15 seconds. That's why he took it off the heat to allow the heat from the bottom of the pan to conduct through the egg and slowly bring it up to the proper temperature.
    Having said this I have tried similar things and have found that while conceptually intriguing in practice the texture is not very good.

      Honey, when people are saying it’s over cooked they’re saying it because it’s browned. Not in the typical rubber bullet scrambled eggs context. You seem pretty knowledgeable about food so I’m assuming you know that when eggs are browned they turn VERY bitter

      Ive made this style before and enjoyed it much more if the omelette is much thinner so that it had less of the whipped consistancy in the middle. I also added some 10 year aged cheddar to the middle before folding.

    Super bonne omelette, c'est la première fois que je vois ce style et je suis ébloui. Ton Omelette est définiment la meileur que j'ai vu et même la meilleure au monde ! Mais je ne comprend toujours pas comme il est pensé a créer ce style d'omelette.

    Just tried this style, it was amazing, the thing which the butter really elevated the omelette, this was a special type loved it, being an Indian I am used to everything spicy but following these shows has opened up new flavours for he and I am loving it ! Cheers!

    I just made one after seeing this.. it wasn't quite there in terms of fluffyness. Also I used 2 eggs. But it was so soft and smooth. I've never had an omelette like that! The amount of time it took, I'd have made 3 regular omelettes. But also I savoured every bit of it. So it was the longest in terms of cooking and also eating! I'd work on bettering myself next time..
