Just some update: Ever since I started making my omelettes the way Chef E-Dubble makes it in this video, my experience has been brilliant. No more burnt omelettes, no more wasting too much time on them, just nice, quick and delicious. Thanks again :)

I found this out by accident: when cooking scrambled or omelette style eggs, don't let the eggs rest in the pan while they are cooking. Instead keep them moving slowly back and forth and use a low heat rather than a high heat. When fully cooked the eggs are still bright yellow and have a moist, squeaky texture that blends well with shredded cheese.

I've watched several videos and have been looking for this method for a week now as I saw it done in a buffet line. I even saw one of Jamie Oliver's and his method was alot of work and not all done in one pan. You're the only one that showed a 3 fold method and that looks super. I'm going to try that one first. Thanks for sharing your video!
