Classic Caesar Salad | Emeril Lagasse

CLASSIC CAESAR SALAD
SERVES 4
SALAD
Coarse salt and freshly ground black pepper
2 cloves garlic
1 to 3 anchovies
2 teaspoons Dijon mustard
1 large egg yolk fork
⅓ cup extra-virgin olive oil
⅛ teaspoon Tabasco sauce
¼ teaspoon Worcestershire sauce
2 tablespoons fresh lemon juice
¾ cup freshly grated Parmigiano-Reggiano cheese, plus more garnish
2-3 heads romaine hearts, cut into 1-inch pieces, washed and spun dry
Croutons (recipe follows)
In a large wooden salad bowl, sprinkle a generous pinch of salt. Add garlic and mash to make a paste using a fork. Add anchovies and mash to incorporate. Stir in mustard and add yolk, continuing to stir until well combined. Slowly drizzle in olive oil, stirring until emulsified. Add Tabasco, Worcestershire, and lemon juice and stir to combine. Mix in ½ cup cheese. Add lettuce and gently toss until well coated with dressing. Season with salt and pepper. Top with croutons and gently toss to combine. Garnish with additional cheese.
CROUTONS
SERVES 4
1 garlic cloves, grated (optional)
¼ cup olive oil
2 to 3 cups French bread cubes (from ½ baguette)
Pinch of salt
Preheat oven to 350 degrees. In a small bowl, combine garlic and oil. In a medium bowl, toss bread cubes with oil mixture until evenly coated. Season with salt and toss again. Spread bread cubes in a single layer on a baking sheet. Bake until golden brown, 10 to 15 minutes.
COOK’S NOTES: We advise using caution when consuming raw egg products; children or other individuals with compromised immune systems should take care due to the slight risk of salmonella or other food-borne illness. To reduce this risk, we recommend using only fresh, properly refrigerated, clean grade A or AA eggs with intact shells.

Caesar salad is one of my favorite cool weather go-to salads and I make it often. Guests love it. With the exception of the hot sauce idea this recipe is, for the most part, the standard current recipe and he does it very well. Many folks are put off by the addition of anchovies and I used to be one of them until I learned that rinsing anchovies well and patting them dry eliminates the harsh taste so many find unpleasant, yet retains the desired earthy taste adding depth to the dressing's flavor. The other ingredient that causes some to balk at caesar salad is the raw egg thing. One way to partially offset this concern is to first coddle the egg; and some recipes call for the the whole coddled egg to be added to the dressing, not just the yoke. Another offset to the raw egg fear is the fact that it is blended with lemon juice which has the effect of chemically cooking the egg. Do these two offsets completely negate raw egg fears? I don't know. I do know that caesar salad is one of my favorites and Emeril's recipe is spot on except for, as I mentioned earlier, the hot sauce. At first blush it seems a little wacky to add heat to the sauce, but I think I may try it next time. Which is to say I might learn something.
Is it just me or did he say he didn't like the ribs of the romaine. And then when he dumped the romaine into the bowl it was like 75% ribs.

Recently we learned something about the Caesar salad, which is one of the best salads on the planet. This classic was invented somewhere we never would have guessed: Mexico.
Legend has it that Italian-American restaurateur Caesar Cardini invented the salad in 1924 in Tijuana, Mexico.
What's Cooking America says the original recipe included "romaine, garlic, croutons, and Parmesan cheese, boiled eggs, olive oil and Worcestershire sauce." Supposedly Cardini's brother, Alex, came to Tijuana in 1926 and added anchovies to the salad. He called his version the "Aviator's salad." What's Cooking America says that this version was so well-received that it became the standard and was renamed the "Caesar salad."

Finally I see someone using anchovies AND worcestershire sauce. That's the way I remember it, but you'd be hard pressed to find a similar recipe online in writing. Most suggest worcestershire as a substitute for anchovies.

For those freaking out about raw egg, don't...the inside of a good fresh egg is sterile. simply coddle the egg in boiling water for 3 minutes EXACTLY! The yolk is still runny (which is what you want) but the shell has been sterilized, which is where the salmonella risk resides.

Classic caesar salad recipe (less the hot sauce). Heavy on the dijon mustard though and light on the oil.
I never can get over the raw egg.
Daddy jack stole this recipe and man did he have a hard time trying to smash his garlic and anchovies. He did it exactly how you did it with the wooden bowl and all. And CALLED IT HIS RECIPE. Lol

Leave it out....I do and the salad is still very good. I don't consume any raw egg at all, ever. No more traditionally made chocolate mousse for me either.

I think what you're seeing there are the inner leaves, which are a lighter green. The small leaves are still fairly tender and mild despite their color.

I tend to agree with both here. I'd also add that if I was gonna use that much garlic and anchovies (and I'm ok with that) I'd work those two ingredients into much more of a paste before I started adding the oil.

I love Emeril. I think anybody who says "Take it up a notch" cough - Bobby Flay, Gut Fierri, many more, needs to pay Emeril every time they say it. Now, Emiril just put about 2+ tablespoons of mustard in that dressing. And an egg yolk. Either thing is the emulsifier that makes the dressing work. Why both?
Use half inch thin strands of the cheese way better than having it pulverized.
He says remove the ribs then proceeds to make the salad with the ribs!!

The original Caesar Salad actually used Worcestershire sauce instead, which happens to contain the juices from fermented Anchovies anyways. Some people over time have reasoned that actual anchovies add a better flavor, but it honestly depends on your preference.
