I think the coin adds a balance to the game, as it makes the people in the lead have less advantage compared to those behind. This is what makes Mario Kart great, removing this would only bring a detriment to the playing experience. However please do not play a game with only gold coin, please this is a warning to all who read this, only gold coins races is inherently evil and why Nintendo didn't allow us item customization until now.
