In the pilot episode, there were two characters that were found not to resonate with the audience. They were dropped from the show & replaced by The Professor & Mary Ann. I believe the replacements were still being negotiated when The Wellingtons recorded the Gilligan's Island theme song, and the line "and the rest" was used as a placeholder for the future cast members.
Regardless of what Tina may or may not have said about being type-cast after Gilligan's Island, the fact is this is what she is famous for. Few actors have the recognition that she has had for decades. Tina was an accomplished actor but not a great actor. Her role as Ginger made her an icon. Very few great actors can make that claim.

It was Bob Denver who eventually demanded that the "Professor and MaryAnne" be added to the song.

The song could have gone: "...and his wife. The professor and Mary And AND The Movie star" and included everyone but that's not what happened as we know. Tina Louise didn't write that theme and furthermore if it was in her contract to have no one mentioned after her then to change that she would have had to relent and allow the other two to be added in the second season thus the credit should also go to her not just Gilligan.

She was not a happy camper while portraying Ginger, and even said later that GI ruined her career.
