- Spaghetti alla carbonara is a traditional Italian recipe and every time you make this dish, it gets better and better. Crispy, tender in the middle, guanciale is mixed with spaghetti and a homemade peppery, pecorino-filled carbonara sauce. My original recipe has become very popular across the globe as we try to set the record straight: NO CREAM! This spaghetti alla carbonara is my 2021 version.

Vincenzo! Please help! This is probably one of the easiest dishes yet every time I do it, it f**ks up! Lol! At the end the sauce always goes to the bottom of the plate and doesn't coat the pasta, am I not using enough cheese? Kind regards

@@enydnightshade it's important to mix the eggs with the pasta water *off of the heat* that way the eggs don't scramble and it becomes creamy :D make sure you finally great a lot of cheese also, it should look like snow :) I hope it works out for you 😀

This is why Italian cuisine is so loved and respected. A few simple, quality ingredients cooked well. Proper carbonara can be a little tricky but it’s delicious.
Absolutely! Italian cuisine is all about simplicity and high-quality ingredients. Carbonara is a classic example of that. It takes practice, but the result is worth it! 🇮🇹🍝
First time making carbonara and it turned out beautifully. Since the idea behind the recipe is to use easily available ingredients, I substituted bacon for guanchale, used a mix of parmesan and pecorino to keep the cost down, and used whole eggs because there's no way I'm throwing away the whites. I also added two cloves of garlic to thr bacon.
It seems the the idea behind the recipe is to use eggs to make a creamy sauce in lieu of using milk or cream.
For a more keto friendly version we can try using something other than pasta, like cauliflower or other veggies.

@Jems68 , I live in a remote area of the PNW in the U.S. We have a small, local pig farm.The family lovingly raises about six pigs a year and then sends them to a local butcher for resting and then slaughter. I ordered 1/4 pig this year. Worth every penny! However, I think I am going to ask the butcher "what happened to my pig's cheeks?" Haha! Since they do such a marvelous job in curing the bacon, I am going to ask them if they'd be interested in attempting to make Guanciale. I can't find it here in my town.
Just get it online if you can't find it. And it's kinda hard to find just like that:)
