  • Glazed Lemon Knot Cookies
    Welcome to Mary'sKitchenMtl!
    Today we are making glazed lemon knot cookies.
    We will mix the ingredients using a stand mixer.
    *You may use a hand mixer.
    In a large bowl add:
    • 6 large eggs at room temperature
    • 1 cup granulated sugar
    Beat for 2 minutes on medium speed.
    While mixer is running add:
    • 1 cup sunflower oil
    • The zest and juice of 1 large lemon
    • 2 teaspoons of pure vanilla extract
    Continue beating for 2 minutes on medium-high speed
    • In a large bowl, sift 4 and ½ cups of all-purpose flour
    *More flour will be needed later for dusting.
    • Add 1/4 teaspoon of kosher or sea salt
    • Add 4 teaspoons of baking powder
    Mix.
    Add the flour mixture in gradually and continue beating on low speed.
    Once batter begins to thicken, remove beaters and mix in the remainder of the flour with a rubber spatula.
    Dust your work surface with flour and transfer the dough.
    Continue dusting the dough with flour as you are kneading.
    Knead until the dough feels silky and smooth. This will take about 5 minutes.
    Shape into a ball.
    The dough should not feel sticky to the touch.
    Cover with plastic wrap and refrigerate for 30 minutes.
    After 30 minutes, remove from the refrigerator, unwrap and cut it into 4 equal parts.
    Roll each piece into a 16 inch long rope and then cut into 8 equal pieces.
    Roll each piece about 6 inches long and 1 inch in diameter. Shape into a knot.
    Place the cookies on a tray lined with parchment paper.
    Preheat your oven to 350 degrees F.
    In the meantime, continue shaping the cookies.
    Bake 1 tray at a time.
    Bake for 20 minutes on bottom rack.
    Remove from the oven and let the cookies cool on your counter.
    While they are cooling, prepare the lemon glaze.
    You will need:
    • The juice of 2 large lemons.
    • Add 4 cups of powdered sugar in a large bowl
    Add the lemon juice gradually while mixing.
    Dip the cookies in and place them to dry on a cookie sheet lined with parchment paper.
    This recipe produces 32 light, soft and super delicious cookies that will melt in your mouth.
    These are a great dessert for any occasion!

    NOW this is how I remember these cookies being made over 60 years ago when I was a kid. Some of the best homemade cookies I ever had and have missed them for so long. Thanks for the recipe and will attempt to do them on my own. Thanks again...

    SorryMary I meant to comment on another recipe, I did try yours and yes I added more flour when I kneaded the dough and they were perfect. My grandson who’s 5 kept going back for more which was surprising cause he doesn’t eat many sweets.

    I just moved into a big city for the first time since I last left the city of 2,000,000 to a city of 600 people. My favourite part of the move are all of the Italian bakeries. I saw these cookies at almost all of them, from prices ranging $15/LB and $2 per cookie. The past few days I spent well over $70 just for these cookies and I really need to stop, or make my own so that's what I'm doing! 😅🙃

      @@MarysKitchenMtl you're right but I'll never do it again! They taste very similar to the ones I buy, but it's not worth the hassle. But I'm really sad that they won't have any until Friday :(

    How long will they stay fresh for once baked. Can I make the dough couple days ahead of time too. They look amazing.

      I make them, let them cool and then freeze them inside an airtight container. I have kept them for 1 month and they are like just baked. I glaze them just before enjoying them.

      Yes Rosella, you can freeze them. Just spread them out in an airtight container so the glaze stays in tact.

      Hello, it could be that your eggs are bigger. You just need to add a little extra flour. There is oil in the dough so this makes the dough quite manageable and should not stick to your fingers or be too soft. Try the recipe once again. Once you transfer the dough onto your work surface, knead it and dust it with more flour like in my video, until you get the right consistency. The dough should be silky and smooth to the touch.       Perhaps the eggs are a little bigger? Just add more flour, 1 tbsp. at a time. Add until the dough does not stick to your fingers. The 1 cup of oil makes this dough quite manageable. Let me know how they turn out when you make them again.
