RECIPE
▼Ingredients
【8 inch square mold】
Corn Oil 95g
Cake Flour 90g
Corn Starch 15g
Cocoa Powder 25g
Egg Yolk 8
Milk 100g
Chocolate 50% 20g
Egg White 8
Sugar 110g
Salt 1g
Lemon Juice 4g
▼Step Instructions
1. Sift cake flour, cocoa powder, Corn Starch, and prepare 8 eggs. Preheat up to 165 degrees and down to 175 degrees.
2. Microwave corn oil from 1 minute 30 seconds to 90 degrees, immediately pour into the flour, stir well with an eggbeater
3. Add chocolate, after complete melting, add milk and stir, then add the egg yolk and stir
4. Add salt and lemon juice to the egg white, add sugar in three portions, beat until the soft peak
5. Add to the egg yolk batter, then add to the cake mold
6. Add about 70°C warm water to the baking tray under the cake mold, and bake for about 65 minutes at upper heat 155°C and down heat 165°C
7. After baking, tear the baking paper around and cut the cake while hot

Making this cake :
We had like hella lot of eggs so i decided to do this
It was pretty easy( suitable for beginners)
For me it took about 1 hour 45 min in total
I used 105 grams of flour, no starch and a round shape cause my square one was to shallow
The cake is awesome looks awesome tastes awesome , approved by siblings) definitely making again
Some Tips:
- use room temperature eggs
- making sure the eggs whites are ‘pure’ , any drop of egg yolk will rune it , so be careful
- don’t overmix when adding the batter to the egg whites (it will disappear the air from the egg whites)
- if your chocolate chips are pretty big , better chop them so they don’t drop to the bottom of the cake

So I made this cake today! Here are my thoughts if anyone is curious:
It is not a super sweet cake. It’s a delicate sweetness with some slight bitterness from the chocolate
For some reason, a majority of my chocolate sank to the bottom of the cake. Perhaps my batter wasn’t quite right or my chocolate chips were too heavy
Considering the amount of eggs used, It doesn’t taste like eggs, but the texture very much comes from whipping those egg whites. It’s soft, but firm. Not like your standard cake which is far more dense
Although I followed instructions, mine didn’t rise as significantly with cracks in it like the video. However unlike the video, mine didn’t deflate as much. Not sure what happened but it was more an aesthetic thing than anything else
In conclusion: it’s a very nice cake that would pair well with some tea or coffee. If you’re looking for something sweet, this may not be for you, however you could probably add sweeter chocolate chips as opposed to the semi sweet chips that were recommended !

@@alicealexandre8441 If I had to pick, to me, it was more moist than dry. It's a very airy cake because of whipping the eggs. My mom compared it to an angel food/sponge cake to an extent. However, this cake has much more volume in comparison. So long as you use the water bath as instructed, your cake should be nice and moist.

@ChillsKills So I didn't get to bake it on my birthday, but I did it today. I was expecting failure becaaaause , my crazy self...I was insecure about the meringue. The peaks were perfect at first but I was interrupted during what I was doing and it ended up sitting for a bit. So when I mixed it into the chocolate batter I felt like the texture was getting runny vs fluffy...👀
My panicked decision to fix it was to just whip it a little more with the mixer 👀😅🙃. When I say AIRBUBBLES EVERYWHERE smh lol. So I wasn't expecting dense fluffy goodness and jiggling is out of the question but I'm sure what comes out will be edible. It was a fun 1st attempt. I'm glad I atleast tried 'cause my anxiety was through the roof and I wouldn't forgive myself if I didn't.

1.攪拌手法錯誤,導致消泡
2.使用固定模具,不要使用活底模具。因活底模具容易入水,就算用錫紙/鋁箔紙包2/3層,也容易因長時間烤焗後入水。
👉🏻回縮問題
1. 加長烤爐時間5-10分鐘
2.使用油布紙/直接倒入模具。因烘焙紙沒有抓附力,會影響蛋糕的爬升,令蛋糕容易塌陷。
👉🏻裂面
1.這次巧克力味道因加了巧克力豆,巧克力豆向下沉,蛋糕向上升,是會容易造成開裂,不影響味道。
2.裂面只是影響外觀,商業的很多都會裂面的,不建議為了追求不裂面,而降低溫度導致內部不熟。

I made a little bit adjustments. I added 1 tsp espresso powder to boost the flavor. Also added I tsp baking powder to give a more fluffy look. Like the comments said, my chocolate chips sink to the bottom. I coated light flour but it didn’t seem work for me. I only used 6 eggs with 80g sugar it worked well.

I made this cake today by myself and it is VERY GOOD! My parents accidentally bought a lot of eggs and since we don't eat them too often I could use 8. I followed the instructions exactly as shown (I used potato starch and grapeseed oil instead) and it came out DELICIOUS. The only thing that didn't come out right were that the chips on top of the cake sunk below the surface, but that wasn't a problem for us, still very delicious.
Hello All! Just came to report back. The way to keep the chocolate chips from sinking is to coat them in flour! and then you can poke some non-floured ones as garnish on top :) Happy Baking!

As a thirteen-year old, I know the feeling... But I started to feel better about baking when I started out smaller-things like mug cakes were relatively easy and quick to make. Smaller portions can be more forgiving, especially if something goes wrong in the recipe. So my word of advice: Don’t give up! I don’t know how many recipes I’ve made into flubs, but over time, I’ve learned and gotten better and more familiar with both cooking and baking. Best of luck to you!

The first time I tried this cake in Taipei City, I was in heaven. It is brilliant when paired with sweetened coffee...this style cake is not as sweet as a regular "cake". This channel has fantastic recipes. All are well worth the effort to replicate, especially if you are interested in Asian cuisine. What is also interesting is that the techniques used in creating this style of cake are an insight into creating better souffles.

It would depend on the pan size. If you use two 8 × 8 pans goes without saying the time will be the same.
